Freeze ahead Christmas desserts

Christmas pud sorted but want something else that can be made and frozen with very minimal extra on the day.

Everything I've found so far is happy being made a day ahead but Xmas eve is always frantic so I'd rather get rid of this job earlier if I can!!

I unfortunately like lovely creamy cheesecakes / chocolate tarts etc which all don't seem to freeze well!!

Chocolate Fridge Cake ( doesn't need freezing, is good in fridge for 2 weeks)

Sticky Toffee Pudding ( make sauce on the day, takes 5 minutes)

We do Black Forest gateau for Christmas dessert. Personally, I buy it frozen from Tesco, but no reason you couldn’t make and freeze it.

I’ve also done mint vienetta, which again obviously is frozen but store bought. It was hugely popular because so classic.

Any baked cheesecake will freeze well.

Sponge with whipped cream freezes well.

Carrot cake.

Gingerbread.

Not homemade but Cook! Do great frozen puds - including chocolatey creamy ones!

I've just made and frozen individual pots of Bailey's cheesecake, recipe from Taming Twins, for Christmas Day. Or we might eat them beforehand as DCs will be home from uni soon. Then I'll either remake them or try something different if they don't work out.

@Raera I was looking at that in my inherited copy of Delia's Christmas!!!

Only thing is, I'm in recovery so couldn't have the rum - does anyone have any suggestions on what I could add to it instead?? Or would it be ok without and just have the chocolate?

I have made this many times both with and without the rum and to be honest it is just as nice without the alcohol. I often add a layer of raspberries on top of the ameretti before adding the chocolate and cream mix it really is lovely and very simple to make

What about pavlova? You could make the meringue a few days in advance, and store in a cake tin, then on the day add whipped cream and fruit of choice? You could make and freeze a coulis in advance if you wanted to - I usually add a bit of port to my raspberry and blueberry coulis, but you could add a dash of Ribena or cranberry juice to loosen?

I've frozen unbaked cheesecakes without any problems - I unclip the side of the cake tin to make sure it looks ok and then put it back on and cling film it. I just decorate the top when it's thawed. Do other people have problems freezing them?
