Why do my flapjacks always turn out brittle and not soft /chewy

Morning,
Here's the recipe I use: 115g butter, same caster sugar
85g golden syrup
225g oats
1 tsp vanilla
Bake 25 min at 180

What's going wrong? And does anyone have a recipe for softer oats that won't break my teeth?

Nooooo, you want this recipe. I've done extensive research recently...
250g porridge oats (the cheap type, not large ones),
150g Butter,
2 generous table spoons Golden Syrup
half a tin condensed milk,
100g demerera sugar
baking tin, no bigger than about 18cm x 28cm
Method:
Preheat the oven to 160 degrees c
Line the baking tin with baking parchment.
Melt the butter in a large saucepan over a medium heat and add the sugar and syrup. Keep gently heating and stirring until all is melted and mixed. If it starts to boil take it off the heat!
Add the condensed milk and mix. Bring to the boil for about a minute.
Remove from the heat and gradually add the oats, folding them in. All the oats should be coated, and the mixture quite dense, but still sticky. Don't add so many oats that the mixture becomes dry.
Pour the mixture into the tins and spread about so that it lines the tin to a depth of 2-3cm. Don't squash the mixture in, just spread it evenly.
Bake in the oven for about 15mins. You should take them out when they just start to go brown round the edges, don't leave longer than this. If they're still squidgy in the middle that's fine, they set on cooking.

Melting the butter first and using much darker sugar will aid chewiness.

Im a pretty good baker but 2 things I can't make no matter how hard I try are baguettes and flapjacks.

You're baking them for too long. I do mine for 20-22 mins but I like a crunchy flapjack

It's either because you're baking them too long or not melting the butter/sugar/syrup mixture slowly enough (or both).

Yes way too long. I do 10 mins and they are a bit crispy on the top and otherwise chewy. Leave to cool in the baking dish.

125g soft brown or golden caster sugar
125g butter
250 oats
4 tbsp golden syrup

Dump the butter, sugar and golden syrup in a pan, wait until it's melted and all the sugar has dissolved, bang the oats in. Tip into an oven dish, tap it down with a spatula & bake at 180°c for about 20 minutes

Works every time for me, no need to add anything else like condensed milk or vanilla, surely that makes them far too sweet

@BraveBlueDuck no not really (as I don't use as much sugar/golden syrup as your recipe) but gives a fudgy consistency.

Soupdragon's recipe is legendary in our house. Dangerously so. I double it to use the whole tin of condensed at a time. I make them for every social occasion, everyone raves about them. I think I've put on half a stone in flapjack since I discovered it on here 😂
