Hi, I love cooking and I am a massive fan of Mexican cuisine. I am going to treat myself to cooking over the weekend and would like to cook a Mexican dish, so would love to hear your favourite Mexican dish.

I frequently do tacos. At the beginning of winter I do a giant pulled pork (pork shoulder in the slow cooker, minimal seasoning), portion it up and freeze it. Then when I fancy tacos/ bbq sliders/ pulled pork sandwiches I defrost a portion and cook with appropriate spices.

So for carnitas in taco form I’ll add taco seasoning (you can buy it in packet form but it’s just a combination of dry seasonings which you probably already have at home). Then I’ll do loooooads of toppings: black beans, corn, avocado or guacamole, salsa, cotija cheese, chopped coriander, lime, shredded cabbage or lettuce, refried beans. If you need to use up rice you can make burritos, which I like to pan fry after assembling so the cheese melts. I always use wheat flour tortillas as I prefer the taste and they’re more versatile (burritos, quesadillas, enchiladas etc).

And yes I’m aware this is very westernised Mexican food. Tex mex really. I haven’t a hope in hell of replicating anything truly authentic: ingredients aren’t available locally and I don’t know enough about making a smoky flavour or getting the most out of tomatillos etc. I do love it though!

Mexican here! You can make authentic food at home, the biggest missing element is corn tortillas.

What do you like? I make Birria, carnitas, and barbacoa fairly regularly, and we eat fish tacos in the summer.

For Xmas we eat turkey ( and a weird apple salad).

Are fajitas the way we have them here in the UK the same as they have them in Mexico?

None of these are authentic Mexican but are really tasty
Carnitas
Tortilla soup
Crunchwrap supreme I use tortilla chips in place of tostadas
Mexican lasagne
Huevos rancheros
lamb barbacoa
Corn salad

Birria is my favourite but you'd struggle to get the ingredients in time for this weekend as they need to be ordered online.

Theres an excellent programme hopefully still on iplayer where Eva Longoria goes to Mexico, where I think she lives part time anyway and has a mexican husband, she travels around different areas, talking about a bit of the history and eating her way through the neighbourhoods and traditional foods. It was really good.

Yeah I use flour tortillas. Tesco used to sell dry chillies and sometimes tk Maxx has them too. It's actually quite easy to make as long as you have those chillies.

I'm watching that on iplayer right now which inspired me to cook Mexican cuisine this weekend. It's such a good programme.

Try using corn tortillas (Asda do them) honestly it’s so much better. I also HIGHLY recommend Capsicana’s Refried Beans in the orange pouch - heavenly, just heavenly. THE best around

Word of warning the only actual corn tortillas you can easily find are these ones, anything else are a mix of wheat and corn (unless you order them online).

For refried beans, just buy a can of borlotti beans do it yourselves... Chopped onion, a bit of oil, and a can of beans , mash them with the potato masher. Just like we make them back home

If you're in London, Whole Foods has real corn tortillas and masa harina, and some dried chilis which I've also found at tkmax. I would love to find a shop with lots of proper Mexican ingredients though.
