Lunch for 10

FalconSkies · 04/12/2024 18:45

Hi, I’ve got people coming for lunch on Sat (we’ll be 10) and I haven’t decided what to give them yet.
Any ideas? I want it to be (really) easy to prepare ahead, but still quite special (not just lasagne). I’m working all week so feeling under-prepared!
No dislikes or allergies but nothing too obscure!
Thanks ☺️

A slow cooked joint of meat, e.g. Jamie O's 5 hour lamb shoulder, or 2 for 10 people.
A tray baked potato dish, e.g. Boulangere (I find dauphinoise a little too rich for lamb) that can be prepped in advance and hangs around happily.
Some green veg, all prepped in advance and cooked in one huge pot, e.g. gently fried leeks (fry in advance), reheat, add peas for a few mins, then a few bags of washed spinach.

Yum!

That sounds bloody lovely!

I'd probably buy some quiches, salads, decent bread etc given the time constraints of working all week.

Or do you mean a proper dinner at lunchtime ?

Beef casserole always goes down well here and can be made in the slow cooker. Failing that Mexican works well with various bits ie chilli, chicken & veg wraps, chips & dips, spicy rice - something for everyone and all pretty simple & can be prepped ahead

this sausage casserole is simple and lovely, perfect for the cold weather, and is just as good reheated.

Sounds fab, great idea.

I’d definitely do the (2) shoulders of lamb. That sounds perfect. Including the suggested sides.

I almost always suggest a slow roasted joint so I'm with @Chewbecca . I often do this with more mediterranean style salads/sides as it's easier otherwise prep in advance, especially in summer although the potatoes ar enice on a cold winter day.

I am planning tabbouleh, tzatiki and hummus with flatbreads all with slow cooked lamb shoulder for a pre-Christmas dinner with the in laws. I've also done it with big piles of slow roasted veg.

Or I do beef rib joints which are very forgiving also with salady type sides and new potatoes.

My other option that works to avoid a full roast dinner is roast chicken/s that I serve on risotto or some kind of pilaf rather than as a roast. If I do the pilaf I'd do greens as well, so prefer risotto as I can get away with very little extra on the side! Grin
