Kedgeree - specifically a recipe much like the one they serve in Bettys....

Does anyone have any insight on how this specific one might be made?

We've had it before many years ago and I forgot that its quite a creamy one.

I cook kedgeree, of my own sort of version but its not creamy or anything.

The waitress said there was cheese in it but I think she meant cream cheese.

This article talks about 'wet kedgeree' that 'marries rice with a distinctly European white sauce' which could be the right sort of thing, with Betty's having Swiss origins.

Googling wet kedgeree doesn't bring up much, but this recipe has cream in it so might be the sort of thing you're looking for.

I don't like hard boiled egg yolk unless it's heavily disguised by mayonnaise so I tend to make a bastardised version where I make the dish as normal but add beaten egg at the end so is an egg fried rice kedgeree hybrid.

Is kedgeree the breakfast of kings or is eating fish before lunchtime a bit too 19th century?

Well we were in there and asked! They dont (and I dont blame them) divulge the chefs recipe.

Hopefully getting a second portion today.

I checked their recipe book (A Year of Family Recipes) and the manual from their cookery course to see if I could find it for you, but it’s not in either of those. You might need to befriend someone in the kitchens!

Can't help, but now I really fancy some kedgeree.
I use a Delia recipe although I follow it fairly loosely. But it isn't creamy, I'm intrigued.

You don't want the recipe though- you want to know the ingredient? ie which cheese.

Email the head office and ask. (not sure that it is a chef in each branch and not just produced in their factory in reality and cook chill)

Ive emailed restaurants before to ask about dishes and recipes and they never give the information out!

Interesting recipe

She doesnt poach the fish, I think if you baked haddock for that long it would be really overcooked

I poach it for about 6 mins and its perfect as long as I dont have it too hot when I mix it in the rice otherwise bits are overcooked.
