Non-windy, vegetarian stew?

Is there such a thing as a vegetarian stew that will not give me wind? I could just make a vegetable stew, but I need protein, and I think it’s the beans that do for me. Needs to be gluten-free as well.

If you're fine with dairy then serve it with a cheesy topping, maybe add toasted hazelnuts or pine nuts for crunch or with cheesy polenta or mash.

I make Nick Knowles' vegetable stew, often but not always with the orzo - I've just coincidentally found out tonight that Tesco sells gluten free orzo! I don't always do the dumplings which are not gf, but I usually add small cubes of paneer or firm/extra firm tofu for more protein - I use tofoo. The stew does use a roux, but I've found Doves Farm flour good for that when our gf AC visits, or cornflour might work? I find the stew tasty, and very filling.

I'm also beginning to experiment more with lentils, it may be possible to substitute those for beans? I've started adding frozen peas in to various things too, having found out that they up the protein, perhaps not in a stew though!

If you're anything like me, what you are reacting to is the galactooligosaccharides in beans. You can do some experimenting, as massive that's not the case for you, but unfortunately they are also in chickpeas and lentils, so you may find the cheese/nuts etc route best.

Try something like this mushroom and chestnut stew. I’ve made it before with dumplings. Any gluten could I’m sure be subbed out for gluten free options.

Often it’s the water that the beans have been cooked in that is the source of wind - so if using tinned beans, it could help to drain and rinse them before adding to a stew. Also there is a supplement called Bean Assist that helps to digest the enzymes that could be worth a try - you do have to remember to take it around the time you eat though.
