Advice on gluten-free Yorkshires rising please?

I use Dove Farm plain flour, add xanthum gum, cook them the same as my usual Yorkshires, but they don't rise.

Any thoughts welcome 😊

I can only get good GF yorkies by following Becky Excell's recipe and using cornflour.

I’m afraid I resort to shop bought for my sister. I’ve tried and tried and they just don’t work.

But I will look at the recipe above.

I always use this one - I find mainly cornflour with just a little doves farm gives the rise and lightness, but with a slightly softer texture than cornflour alone.

Cornflour ones get huge but a bit crunchy, I mix tapioca flour in which improves the texture

The Becky Excell recipe makes great Yorkshire puddings.

I use half measures from her recipe (so 3 eggs, 100g of cornflour and 150ml of milk) and can from that make 12 great big fluffy Yorkshire puddings in a muffin tin.

the trick is to get the oven as hot as you can, have the tin with oil drizzled in almost smoking hot when you tip the batter in and once they are in the oven don't open the oven door at all until the 12-15 mins is up (depending on how hot you can get your oven)

I also swear by Becky Excell. Also make sure your oven is really hot first, as well as the pan you put them in.

I'm afraid I buy the Yorkshire company ones in Waitrose or the made without ones in M&S - all perfectly nice

Another vote for cornflour-only Yorkshires . The other thing is to make sure your pan has heated up really well.

I have a few weeks until our next meal where I could do gf Yorkshires - may just have to try all the ideas out first...
