Can anyone recommend a book which can teach me lots of different techniques à la GBBO? Even better if it explains the science behind it, eg the oven is too hot causing cracking/too little whisking makes it flat 😋

Nicola Lamb is the woman you want. Her substack - Kitchen Projects - is an absolute goldmine and I love it, it's the only substack I pay for the bonus content for and I find it 100% worth it (though there is plenty of free stuff too). She really gets into the detail and her countless GIFs demonstrating techniques are so useful for a visual learner.

She had a book come out this year, SIFT: The Elements of Great Baking, it's a beautiful, well made/written book. Just shy of 350 pages, and the first 100 discusses techniques, science, and what makes bakes work (or fail). The remainder is organised in the following order:

  • base recipes (things like pie dough, genoise sponge...)
  • bakes that take an afternoon
  • bakes that take a day
  • bakes that take a weekend
  • extras (things custards, pralines...)
It has accessible recipes and ones that push you and your skill set, it even goes into Viennoiserie.
