Goose for Christmas - Help!

We're hosting extended family for Christmas this year and DH has ordered a 6kg goose! Neither of us have cooked goose before and I'm struggling to decide between a few recipes:

Has anyone cooked these before / do you have any other recommendations? Any help greatly appreciated!

We absolutely love Goose at Christmas, DH is from somewhere its the usual Xmas eve/day lunch.
It will give so much more fat than you could imagine ane feed fewer people than you think.
I just roast it upside down for most of the time with the breast underneath to keep it moist and then turn it back up for the last part, I can't help with timings though becasue I just keep checking on it - you may need to drain some fat off (which can be a bit of a palaver).
I serve it with spiced red cabbage cooked to Oma's recipe, spiced apples and a potato bake of some kind.

Goose is very tasty - but has a lot of fat so cook it on a trivet.

However- it also has a much higher bone to meat ratio, so will not serve as many people as a similar weight turkey. You are not looking at piles of leftover meat for sandwiches ect later on, so plan accordingly.

Agree with PP - plan accordingly because there’s nowhere near the same amount of meat than equivalent weight turkey. It is so worth it though, absolutely gorgeous. I used to do it every Christmas for years, until DDs went vegetarian and it seemed a bit too much of a faff for just two of us. I do think I might give it a go again this year though as I love it so much.

I always used this recipe:

Btw I always needed help to lift it out and drain off the fat as it was so heavy (keep the fat for roasting the potatoes!)

Roast Stuffed Goose with Prunes in Armagnac

There was a time when goose, rather than turkey, was the traditional family treat at Christmas. In the past few years it has come back into its own and supplies are now plentiful during the Christmas period. In this recipe it is served with apples and...

I reckon about 1kg per adult.
Our usual 5kg bird feeds the 2 of us 2 meals, with some for sarnies.
Plus enough fat for roasties for months, & gorgeous stock from the carcase.

Remember to put it in the oven looking at you DM!

Goose is delicious but agree with others you need more weight than you would in turkey.
