Christmas vegetarian pie

Hi. I want to make a big puff pastry pie for Christmas dinner, to have with dauphinois and the usual vege. The problem is that one person won’t eat mushrooms and another won’t eat tomatoes, courgettes, aubergine or broccoli. Would also rather avoid meat substitutes.

Is this an impossible ask? I’m hoping for one big pie, rather than individual ones.

How about something like this www.waitrose.com/ecom/recipe/veggie-christmas-pie. We use to just layer up lovely vegetarian layers in a loaf shaped pie & that was more popular than turkey.

I made a squash and chestnut filo pie on Boxing Day last year which was delicious. We had it with roast potatoes and usual veg and I also did venison sausages for the meat eaters

Sorry, posted too soon! I use the Cranks filling with a shortcrust base as in the recipe but a puff pastry top - and I usually make a big one in a cake tin rather than pushing about with individual ones, (though it might work well for Christmas if you have a crowd because you can make them in advance).

This is a lot of work but can be done in stages (some at least of the fillings freeze well), looks great and has excellent flavour and texture. Obviously you don't need to make the pastry yourself or you could make a different pastry. You could tweak to remove the cheese from the nut loaf/stuffing layer, but actually it doesn't taste strongly of cheese (I used Wensleydale, I think, as we don't like blue cheese here). Hommity pie is delicious, but the dauph potatoes are a must, so it's a no. I'm very lazy and definitely don't want tp be faffing around cooking lots of different layers etc. Ready made pastry is a given - life is too short for puffing around with homemade puff pastry imo.

I think I'll have to invent one. Do you think if I roasted some parsnips, squash, red onions and carrots and then mixed in some Merchant Gourmet Puy lentils and some walnuts with some herbs and a splash of red wine etc it might work? Or too dry?

I've found the Waitrose one, which sounds delicious. I reckon I could cobble something between that and mine and it should go nicely with gravy etc. Might have a trial run before Christmas!

How much will they not eat these things? In the past I have made a half-and-half pie for someone with preferences, rather than allergies.

You get some crossover in the middle, but can have a good "clean" section for each half, unless the filling is very liquid going in to cook. Use a bit of pastry trimmings on the top of the pie to indicate what's where.

Does it have to be a pastry pie? I have made this loaf many times for Christmas, and just serve it with the normal potatoes, veg and (vegetarian) gravy. Non-vegetarians usually have a slice of it too.

The last nut roast I made was disgusting, so they've turned their noses up at another go! A pastry pie has been requested, although I'd possibly happy with just pastry top.

Just eaten it - my veggie DS and DIL loved it. I would make it again but definitely no good with dauphinoise.
