I agreed to hold a family curry night so I am looking for some fairly simple curry recipes for about 10 people that I could prepare in advance if possible. Thank you

This is really easy to make. Can prep the chicken in yoghurt in advance. I use boneless chicken thighs. Don’t worry if it looks a bit weird when it’s cooking. Give it a stir before serving.

My student son cooks it too so it must be easy!

My cheat go to is brown onions until golden, add chicken thigh on the bone (8 small ones for 4 people, or 4 large ones, you can use drumsticks too) and brown, add pataks tikka masala paste, half a jar per 4 - 5 portions or 1 pot per 2 portions plus tsp cinnamon and a chopped red chilli, a handful of sultanas and yogurt to mix in and cover chicken bring to bubbling, Season if necessary. Cook on low covered one hour until meat is pulling from bone. Add coriander to taste.

My fail safe way to make a curry rather than the actual recipe is tonnes of onions. And cook them really, really slowly so they soften down and caramelise. I'm talking standing cooking then for an hour on a medium heat. You don't want them to catch. For my 4 people , I use 3 fairly large onions so for 10 you're going to need a lot. And also add a lot of salt to them, again more than you think. These onions make the base of the curry sauce and take it to another level.

The makhani sauce recipe from Dishoom is very good. It tastes like what it’s supposed to (not bad British curries). You can find it here in their Ruby Chicken recipe, but you can make the sauce on its own and use it for anything (lamb, prawns, paneer). We tend to make a paneer curry with it. It can be made in advance.

You can skip some things like chilli powder and tomatoes.

Look up the Curry Guy or Al’s kitchen (You Tube).

Roasting cumin and coriander seeds then grinding them adds a lot more flavour than you’ll get from ready bought ground spices.

I also chuck some random stuff like chopped up pepper or grated carrot (hidden veg)

BBC Good Food's slow cooker chicken korma is easy and delicious. My personal favourite is chicken katsu curry and you can prepare everything in advance then just hear it up on the day if needed.

This is my go-to recipe for katsu sauce: https://www.bbcgoodfood.com/recipes/katsu-curry-sauce and you can either make your own breaded chicken or buy it ready made.

Don't forget naans, poppadoms, samosas and bhajis to pad the meal out, especially when cooking for a crowd.

Tip - Chop and blitz onions in food processor. This makes a good curry base in which to cook your spices. If you are using tinned tomatoes, blitz those too. The Hairy Bikers have a great curry cook book and they include recipes for curry for a crowd.
