Weigh the eggs and then measure out the same in self raising flour, Caster sugar and butter and use Mary Berry's all in one method

Victoria sponge is a basic recipe, they don't or shouldn't really vary (50g sugar/butter/sr flour to each egg give or take) biggest mistakes are using wrong size tin and expecting massive rise. Use a size smaller if anything to get a thicker layer if that is what you like. I would be using 6 eggs for two 9" layers for example, 8" would take a 5 egg mix, to me a 4 egg mixes needs smaller than those two sizes to get a decent layer thickness.

I prefer a traditional method like creaming butter/sugar together first, although an all in one mix can work well too and is handy, make sure the fat is good and soft for that method.

Weigh your eggs in the shell and add equal amount of the fat , SR Flour , and Caster Sugar .
