I haven't, but I would think the main problem you would have here would be coping with the tomato and pepper skins, so you might have to skin them first, which can be a bit of a faff!
Because I'm a lazy cow, I wouldn't bother. This is what I would do:
Slice and onion, peel and chop a couple of large cloves of garlic, chop the tomatoes and peppers and fry all this gently in olive oil till soft.
Then add chicken stock or water, season with salt, black pepper and oregano/mixed herbs/herbes de provence (whatever you have to hand) and simmer for about 20 minutes.
After this, blitz it in a blender or with a hand blender, and then seive it into a clean pan - this will get rid of any bits of skin.
Taste and season again. You might need to add a bit of sugar as it could be a touch bitter. Would also be lovely to add some fresh, chopped basil and cream/yoghurt before serving.
