Seeing Nicki georgiou on insta, and her "chuck fresh things in a glass one-serving oven dish" recipes look great because
-we are a busy household of 2 f/t working adults and 3dc, DH and I both work long hours and so I love a meal prep.

  • I am trying to battle meno weight gain and so don't always want to eat the same as my 3 skinny kids.

I thought £30 for an online book of 40 recipes I can't preview is a bit steep, so does anyone have any similar recommendations? Either of a book or recipe links. I have the green roasting tin which is excellent but family size portions and occasionally I'd like something a bit less virtuous and a bit more variety

I don't know the second (though the reviews are great), but Signe Johansen's recipes are brilliant and I really enjoy her books!

I really recommend Eleanor Wilkinsons recipes, I started following her during lockdown and have had great success with some of her recipes. She has a book which was linked above but so many of her recipes are available on her Instagram or Tiktok too

I'm not 100% sure what you're asking. YOu want low prep meals for one person?

Lots of tray bake type things can be done for one person - just use a smaller tray/dish. One of the reasons they're so great is that food cooks evenly so it doesn't actually matter if you have 10 chicken thighs in there or 2.

My quick easy things for 1-2 people are probably things I do at lunch if I want something more than a sandwich. So a quick fried rice (usually using packet rice), tomatoes and onions roasted in the air fryer wth some couscous and feta, hot smoked salmon from the supermarket served on wilted spinach with a bit of creme fraich. Or smoked mackerel, a tomato salad and some bread. Sometimes I just make a quick tuna mayo mix and have with some avo and a slice of sourdough.

@SpaceOP you're right- I probably wasn't 100% sure what I was asking. I guess: 1 person serving recipes for meals with not much prep which can be shoved in oven in baking dishes so that I can come home to something ready which is reasonably nutritious. If there were some dc- friendly recipes in the same book too, that would be a bonus, as I feel this is where the green roasting tin book falls a bit short.

I know people will say slow cooker, but a) the portion-control element of individual dishes appeals to me and b) we're veggie (which I didn't mention earlier because I'm quite happy to adapt omni recipes but slow cooked veggie meals are fairly mush IME
