Honey Spiced Pears -

410g of pears - sliced in half
2 eggs
450ml of Custard
50g of clear honey
50g of plain flour
25g brown sugar
1/2 tsp of ground mixed spices

Put the drained pears in an ovenproof dish. Whisk together the eggs, sugar and half of the honey until thick and creamy. Fold in the flour and spice, pour over the pears. Bake at 180°C; Gas 4, for 40 mins. Heat the custard in a pan, not letting it boil. Stir in the remaining honey, pour over cooked pears, and add a sprinkle of cinnamon, serve.

You can change the recipe to apples too which is just as lovely. Makes a nice change from a stodgy cake after a big meal.

melt 125g butter in big saucepan,
add 100g plain choc and let it melt.
Take off heat
Beat in 300g fine cut marmalade, 150g caster sugar and 2 beaten eggs.
Mix in 150g SR flour bit by bit.
Put into 20cm springform pan (buttered and floured) 50 mins at gas mark 4/180 C

WARNING not everyone has had success with this but it has never failed me

My choc mousse recipe is my dinner party standby - got it from Larousse years ago. You only need eggs (roughly one per person) and chocolate (I normally use about 400g choc and 6 eggs). You do have to be happy to eat raw eggs though so better check if anyone is pregnant. You melt the choc, and separate the eggs; stir the egg yolk into the melted choc. Whisk the egg white, stir a little bit of the white into the choc mixture and then add the choc mix to the rest of the white and stir lightly to combine. Put into one big bowl or individual dishes/bowls/wine glasses/coffee cups. Yummy.
