Shortcrust pastry - what to make?

DH accidentally picked up shortcrust pastry in the shop this week.

What should I make with it?

Is it sweet shortcrust? If so, I'd make apple pie - perfect for this time of year.
If not, chicken pot pie or quiche.

Assuming it's not sweetened pastry, I'd lay it in a swiss roll tin, prick it all over and weigh down with baking beans before cooking for 10 or so minutes. I'd then smear it with pesto and cover that with roasted veg (peppers, courgette, onion, mushrooms, whatever) and grated cheese. Whisk up a couple of eggs, season and pour over then shove it back in the oven till cooked - 25, 30 minutes.

Voila, roast vegetable tart.

Interesting - I never add sugar to my pastry when I make it for sweet pies etc mince pies, apple etc. I don’t miss it as the fillings are usually sweet enough!
