Ready meals and recipes... I'm going through a major lasagne kick at the moment.

All veg - not quorn type

Incredibly easy. I have never used the full quantity of mozzarella that she recommends though, it seems a lot!

I roast veg first too - makes for a better flavour

I roast thick slices of aubergine, a bulb of garlic and onions cut in half. But I lightly saute peppers and courgettes for more texture and bite. Chop the aubergine and onion, and squeeze the garlic in. Add passsata, or tinned tomatoes, salt (taste) , and herbs, and some basil.

white sauce - flour, milk, butter, salt and freshly grated nutmeg,

mozzarella on top.

I'm a pescetarian but used to saying veggie for ease of not sounding like a nob 😜

This. Possibly a special occasion dish, but a food processor makes it much less of a faff than making a traditional sauce + bechamel lasagne. I feed it to my meat-eating family because frankly, you'd never eat any other lasagne again Wink

This looks lovely but my husband doesn't eat lasagne and I couldn't eat it all myself! I'm guessing it can't be cooked then re-frozen? Or split into two portions and cooked separately?

Sorry if that sounds like a daft question.

I think it'd be really difficult to split it before cooking. I checked the package and it says not to re-heat once cooked, so it depends how much attention you pay to that kind of thing!

I always reheat ready meals. I often take leftovers to work and chuck it in the microwave for lunch. Never been a problem.

I roast red onion, butternut, aubergine with a pile of cherry/plum tomatoes and some garlic.

Then I seperately make a more traditional tomato sauce using some chopped onion, tomato, herbs etc. At the end, I add all the roasted veg into the tomato sauce.

Then a traditional béchamel and layers as with a meat lasagna. If I want to add more, I sometimes mix some ricotta and cooked spinach and add as a sort of layer alongside the bechamel.

It's a bit of a faff but brilliant and freezes well so worth doing a big batch - I usually make individual portions and freeze them for home made ready meals as we cook them from frozen in the oven.

@Philodendron I made this for our meat free Monday dinner and it was a hit with everyone! Usually there is at least one person who isn't keen, but not with this. The spinach and ricotta layer was genius and something I shall bring across to my usual meat one

ottolenghi spicy mushroom lasagne - love this but not cheap with wild/oyster mushrooms but delicious.

and Ed Smith does a lush mushroom, kale and tarragon lasagne which I cant' find online but will take a photo of recipe if you want it

Agree with Jamie Oliver's summer lasagne and Delia's Mediterranean vegetable one. The only ready meal version I like is the Charlie Bigham. The others all seem too watery or tastless.

Charlie Bingham's veggie lasagne is good

The gastropub M+S mushroom, leek and butterbean cobbler and brie and spinach gratin are also lovely when you want a change from pasta.
