What can I make with 6 eggs?

My 18 month old pulled a box of eggs out the cupboard and they cracked so now I have 6 eggs to use up of which 2 are broken yolks. Already eaten tonight so don't need an omelette.

Any recipe suggestions? Sweet or savoury?

Frittata - good warm or cold and chuck in whatever else you've got. Crustless quiche is along similar lines

I'd make an omelette, let it cool down, cover and put in fridge for breakfast. You could microwave it for a couple of minutes if you wanted it hot.

Use 3 in a cake and hard boil the other 3 for snacks or to make egg mayo.

A cake! Six eggs, then 350g each of butter, sugar and self raising flour. That will make two and you can put cream and fruit in the middle. Or jam?

Or a big Spanish style omelette with onions and potatoes. Maybe peppers or other veg as well? Or ham/bacon if you eat meat.

I'd crack the whole lot into an airtight container and have omelettes or scrambled eggs in the morning.

Awful name but the kids and I love making 'poisonous warts' from the gruffalo cookbook! 4-6 beaten eggs, crumbled half block of feta, mugful of frozen peas and some chives or chopped spring onions. Divide mixture between muffin tins and bake for 8-10 mins. Basically mini frittatas but a really good flavour combo.

Mary Berrys lemon drizzle cake takes four eggs but does require lemons or lemon juice. Might be tricky at this time of night. Otherwise bin em and clear down. It's important to know when to cut your losses!

I'd probably do a frittata too. With cheese & whatever's in the fridge. I love pepper, mushrooms & onions.

You can also freeze de shelled eggs if you aren't ready to use them. Beat a few together and add a small amount of sugar or salt. I always do salt as you can still use them in sweet dishes.

Clafoutis- it's a French sweet. Made my first one the other day, I thought it was more of a cake but it's actually like a cross between a sweet Yorkshire pudding and a dense baked custard.
Look up recipes but you make a sweet batter, pour it into butter that's been heated in the oven like you would a toad-in-the-hole, add soft fruit - can be frozen or tinned, like raspberries or cherries or apricots, and then bake it until it's cooked in the middle. I doubled the quantities on mine and it cooked fine, I think I used 5 eggs? It was delish, nice both hot and cold, with a bit of cream.

I would just put them in a tub in the fridge for the morning and make scrambled egg or omelettes for everyone. Seems the easiest thing to do.

If the yolks are still separable then Delia's squidgy chocolate log uses 6 eggs.

It's delish! I just use good raspberry jam and whipped cream in the middle, or fresh raspberries

Put in fridge overnight. Make scrambled eggs in the morning. You can beat a couple at a time and then freeze, they’re fine thawed and scrambled, or for pancakes or French toast.

This. Seems the most sensible thing to do.
If you want to use them up tonight and you have a loaf of bread, you could make a few slices of eggy bread/french toast. It keeps in the fridge for a few days and takes minutes to heat up in a dry frying pan.

DDs school has a bake sale on Thursday so maybe I will go for the cake!

I happen to have lemons!
