baked risotto - how?

want to slam something in oven and go to library

was going to get rid of this butternut squash while dh away since he doesn't like it

can I bake it in a risotto and if so how? quantities etc

don't want to come home to hard floating rice

not squash but you may be able to adapt
don't think you can just bung it in the oven and bugger off for ages though
that would be far too easy

dunno cappy, if i'm making a butternut squash risotto i always bake the BS beforehand anyway as i think you need it for flavour and sweetness. only takes half an hour or so, how long will you be at the library, then you could knock up the rest when you get back. plus, if the BS has been lying around for a while it may have lost its flavour, that's happened to me before, a total PITA.

a bit like this but with BS ratehr than spinach. excuse the blether, i am shit at writing recipes but you'll get the gist.

Hello, Tana Ramsay has a vv simple baked risotto (with pumpkin but I use butternut squash as well - in fact I am so crappy at cooking I use ready cubed bags of butternut squash/pumpkin from waitrose). I am the world's worst cook and so far I haven't had any problems with it.

Basically, put rice (400g), 50g butter, pumpkin/squash and 2 pints of chicken stock in dish, cover with lid or foil and bake for 30 mins at 200c.

She then adds grilled pancetta and frozen peas (I just use peas normally), stir and then add a shed load of grated parmesan (250g). Add parsley and eat.

No stirring (apart from at the end) required. Tastes ok as well.

squash and ricotta sauce will be either gopping or creative genius.

(that delia recipe is really divine. now expect all risotto's to taste strongly of madeira though.)

Baked butternut squash risotto!

1 butternut squash chopped into cubes
1 chopped onion onion
1tbs butter
4 tbs olive oil
3 garlic cloves
1 tbs finely chopped fresh sage
300g risotto rice
200ml dry white wine
700ml veg stock
200g frozen peas

30m at 180degrees

fry the onion and garlic in oil and butter (you can vary the amount depending on concern for waistline!)
add the sage and risotto rice (I sometimes just use some dried herbs)
coat rice in oil/butter
add wine
add stock
add butternut squash pieces
put in lidded casserole dish in oven at 180degrees for 15 mins
add peas and give 5-10 mins more

Serve with parmesan or just plain.

don't whatever you do, think of pasta with vom sauce
it will almost certainly cause a relapse

too late now I suspect but you can just bung all the ingredients you want in your risotto (chopped up appropriately of course) into a casserole pot with a lid, add lots of stock, and bake it in the oven. This is how we make our risottos at work, it's a chicken and butternut squash one with garlic. Quite popular, very morish and creamy.

bizarrely though dd, who is so thin and eats so little that she sees a dietician and has special desserts, ate all of hers, all of her sister's and some of mine
