Massive bunch of coriander, what can I do with it?

Made a curry today and used some for that but jave a huge bunch left over.

What can I make?

I usually freeze it - I've not found a good use for a huge bunch of coriander other than this!

I freeze it. I find it's a hhern that doesn't keep well, even if you buy the pots, but I love having it to hand and it does freeze well.

Anything by Ottolenghi. Just pile it on top and enjoy...

Or, if you want something simpler: Avocado salad with tomatoes, cucumbers, spring onion, garlic, chilli and lots of coriander. Olive oil and lemon or lime to dress. Eat on its own or with homemade chilli nachos.

Or make a herb dressing for steak.

You can freeze but in my experience it really doesn't keep its texture/flavour well. If you are going to freeze I'd do it in icecube tray suspended in olive oil, if you can.

Freeze it in ice cubes (keeps better than freezing it alone).

Carrot and coriander soup sounds good. Now I fancy that.

You have to put the potted herbs into an much bigger pot, so it has enough room to grow properly

If you feel like cooking again I often do sag alloo or sag paneer which both use a bunch of coriander. Delicious!

Oh yes there will be loads of curries/etc that would make good use of it of course.

Dal makes a great vehicle for coriander, too.

wash it, spread it between two kitchen towels to dry overnight then freeze whole. You can then use directly from frozen.

I second a zingy, garlicky chutney. Can be used as a salad dressing, a marinade, as a condiment for cold meats, a spread for sandwiches, on tacos/burritos or simply as a dip or swirled into hummus. Delicious with so many dishes. My favourite herb!

Ive never had much success with freezing herbs in and of themselves but smother them in oil and they'll last a bit in the fridge but also in the freezer in a sauce.

No they wont retain their exact texture and colour but its good enough once its dolloped over something nice.

Put it in a bottle of gin with a bit of sugar and lemon and orange zest and black pepper. Leave the bottle in the fridge and shake every day. Have amazing G&T's at christmas.
