Anyone has some lovely ideas for Moondog's hake which is presently residing in the fridge?

I am a bit crap with white fish-do the same few things over and over it seems.

I don't know if this will work with hake but i use it as a sauce with other white fish. It's basically double cream, fresh lemon juice and fresh coriander. If you are interested I will hunt out the recipe.

My favourite easy white fish dish is to top with a few prawns (I use raw from freezer), torn basil leaves, few sices of avocado if I've got one, double cream + cheddar cheese. Stick it in the oven at gas mark 5 for 25 mins. Lovely. It's a jamie thing, think he also has a similar one with cherry tomatoes, I got it from one of my sister's books so don't have the details of the other version.

google some Spanish recipes, hake is used a lot there. Galician style is nice, with paprika, potatoes and onions.

steam chinese style.

-Oil steamer (so fish won't stick)

  • put fish in steamer
  • spread 1tbsp black bean sauce on fish
  • scatter chopped ginger and garlic on top & steam (10 to 20mn depending on weight)
  • scatter chopped spring onion/coriancer on top before serving.(and finely chopped de-seeded red chili if you like)

Make rice and stir fry baby corn and any green veg with a little garlic and soy sauce.

Whizz up some sun dried tomatoes, spread like a paste on top of hake and wrap whole thing in proscuitto (or I use Serrano ham) and bake for 20 minutes. Serve with new potatoes and steamed veggies .....mmmmmm

What about a fish stew? Get some anchovies, thyme, garlic and orange peel and fry in olive oil. Add some white wine (vinegar), tin of tomatoes, some chilli, salt and pepper, capers or olives if you like. Chuck fish in 5 minutes before you want to eat. Serve with potatoes or rice (if you have waxy potatoes eg Charlotte you can chuck them in with the tomatoes but make sure they are done before you add the fish). You can put mussels, prawns, etc in too if you have them.

roast it. think of it like a really good piece of cod. or grill it. beautiful fish. are you sure it's hake? there are other fish that get passed off as hake.

fling crumbs (or whatever you have, squashed oatcake etc) and herbs with a bit of grated parmesan. grill. scoff with tomatoes, parsley whatever is to hand.

well at 10pm that is about my limit of cooking, you may fancy arranging a spanish garnish.

I think in Spain you'd stew it with chickpeas and potatoes. Long time since I lived there but imagine white wine rather than red...

My MIL (resided in Galicia for the last 50 years) does lots of delicious things with hake.

A la gallega - as above, with oil, paprika and garlic. serve with boiled potatoes.

A la romana - battered in a light egg and flour batter.

salsa verde (different to what I knew as a salsa verde) - fry up a little sofrito of onions and garlic, place fish on baking tray, arrange sofrito, some clams and prawns around it, plus parsley, and bake.(my favourite)

Yes,it is hake Soph. I trust the fishmonger.
I will try 'em all out.
I floured it and fried it then deglazed with dry sherry and capers. Ate it with rice and courgettes tossed in lemon and harissa.
