What to do with extra beef fat

My lovely butcher has given me some extra beef fat with our joint for tomorrow. I'm assuming I just it in when I'm roasting the joint for extra flavour and then I can keep any of the liquid for using on the roasties and Yorkshires?

Yes, I use the melted fat in the tray for Yorkshires.

You could always melt it and add lots of seeds and nuts to make a fat ball for the birds if you don't want to use it.

Ah, my old NDNs had a bird table. My cat used to sit underneath, I reckon he thought it was a buffet or possibly TV. Luckily he was more of a ratter.

I use dripping, lard and chicken fat from roasts in cooking. I think it's massively wasteful to bin it. Beef dripping makes lovely roasties and yorkies, or fried potato, if I'm sautéing onions or mirepoix I'll use some animal fat; also a small amount in pastry (beef just for savoury pies). I don't eat meat, but I'd rather eat the by products of my family meat (eg stock) than waste them.

Render and filter and it will last for months in the fridge , just ready for roasties , pastry for meat pies etc

  1. Will make the best chips you've ever tasted if you have enough of it to fry.
  2. Suet dumplings/pudding.
  3. Suet popcorn. (melt just enough to cover popping corn kernels). Once I'd tasted this there was no going back to rape/sunflower oil.
  4. Substitute for guanciale to make a carbonara.
