The Cookery Year: Chocolate mousse recipe

Hi there

I don’t suppose anyone has a copy of The Cookery Year cookbook from the 70s and could share the chocolate mousse recipe in it?

It’s the only chocolate mousse recipe I’ve ever really liked, and a staple at my parents’ 80s and 90s dinner parties. I really want to make it but whilst I can remember the basic ingredients I can’t remember measurements etc.

Thank you!

Here you go.

CHOCOLATE MOUSSE

The featherlight whipped concoction known as mousse is nearly always served cold. Chocolate mousse is one of the most popular sweets, easy and quick to make.

PREPARATION TIME: 20-30 min.
CHILLING TIME: 1 hour

INGREDIENTS (for 6):
12 oz plain chocolate
1/2 oz.unsalted butter
1 tablespoon Cointreau
4 large eggs

Break the chocolate into small pieces and put them in a bowl with 4 tablespoons of cold water. Set the bowl over a pan of gently simmering water and leave the chocolate to melt, stirring it occasionally.
Turn off heat and leave for 5 minutes, stirring continuously. Remove the bowl and stir in the butter and Cointreau.
Separate the eggs and whisk the whites until stiff. Beat the yolks into the slightly cooled chocolate mixture, then gently fold in the egg whites.
Spoon the mousse into individual glasses and leave to set in the refrigerator for about 1 hour.

I know, I knew I could rely on mumsnet!

My Dad is coming over for dinner tomorrow : it would have been my parents’ 50th wedding anniversary (my mum passed away many years ago) and he wants to commemorate it, so I thought it would be nice to make that mousse, given that it was clearly my mum’s favourite recipe!
