Savoury tarts without egg

I'd like to take a homemade savoury tart in for lunch at work, with salad. Either a slice of a big tart or make mini ones. I am not keen on egg, so anything too quiche like is not appetising for me. Any ideas? I make a basic one at the moment with puff pastry sheets and a layer of pesto or olive tapenade and grated cheese on top. Would love something more substantial. Was thinking of caramelising some onions and piling those on with some brie or blue cheese. Any other ideas, incorporating veggies to up my vegetable intake (I'm vegetarian, so no meat options).

Pissaladiere, but sub the anchovies for extra olives, or perhaps sun dried tomatoes?

I make a tomato tart as our polytunnel is currently pumping out tomatoes.
Two onions cooked, add garlic , a kg of chopped tomatoes, tablespoon of nigella seeds, add a dash of wine vinegar and a teaspoon or so of sugar. Cook until nice and soft and a lot of liquid has evaporated. Put onto baked pastry base, cut up a few cherry tomatoes and put across the top, add goats cheese or whatever cheese you prefer (I love feta). 10 mins in oven until melted. Yum! Great for a packed lunch or even a picnic.

Clean and chop 2-3 leeks, a bit of garlic and onion, saute with thyme and olive oil until nice and soft. Mix a little cream and/or grated cheese, put in a crust and top with more cheese like goat cheese rounds.

I make one which is puff pastry and pesto as a base, but then I add sweet roasted red and yellow peppers, caramelised red onions, black olives, fresh basil and a sprinkling of mild chilli seeds.

I use bought puff pastry, and a variety of caramelisable veg, not just onion (courgettes, peppers, aubergine, even slices of sweet potato). Make a nice design on the bottom layer, it looks great!

If you're not totally against egg you could do a pot of ricotta blended with one egg as a filling. It shouldn't taste "eggy" and will set like a quiche.

If not you can do blended silken tofu ( you can add a bit of nutritional yeast and tumeric for color) with roasted veggies.

You can also soaked and blended coral lentils ( rince the red lentils, pour into the blender and cover with boiling water, let them sit for 20ish minutes until they are plump and then shut the blender and blend until very smooth, scrape down the sides and blend again. Once they are fully blended pour the mixture into a pan and stir with a whisk over medium/low heat for 5 ish minutes) you can then pour this over your "quiche/not quiche filling" instead of eggs. You can of course flavor this mixtures with spices/herbs.
