Red cabbage recipes?

I usually buy it.. and it’s so good! The appley sweetness…

but how do I make it?
I have a red cabbage, apples, red wine vinegar? And cranberry sauce.

any really easy (and quick?) recipes you use that work for you?

1 kg red cabbage, 450g onions, 450g cooking apples, 2 cloves garlic

Chop all of this finely. The food processor on the slicer setting is your friend here. Put it in a casserole dish. You need one with a tight lid.

then add 1/4 whole nutmeg, grated, 1/4 level teaspoon ground cinnamon, 1/4 level teaspoon ground cloves (or a few whole cloves if you haven’t got ground), 3 tablespoons brown sugar, 3 tablespoons red wine vinegar, 30g butter, in little lumps, and salt and pepper

Mix it all well together, put it in the oven with the lid on, and let it cook slowly for 3 hours at 150. I give it a stir every hour or so. It will reduce down quite a bit.

Makes loads but it freezes well. Good with pork or sausage and mash.

definitely not cranberry sauce,the above recipie is pretty good but I would also add a spoonful of caraway seeds too

I use Delia's from Complete Cookery Course. It's slow cooked but easy, just blips away happily in the oven. Reheats well too.
Otherwise I do a salad with raw red cabbage, roasted squash and a mustard / red wine vinegar dressing.

I made some recently, stealing from various recipes and everyone agreed it was lovely.

Heat oil (on low)
Add tsp Demerara sugar
Add red wine (I guessed but maybe 100ml)
Chop 1 red cabbage
Peel and chop 2 pink lady apples
Add cabbage and apples to pot and mix
Add zest of 1 orange and 1/2 tsp Demerara sugar
Mix and put lid on
Leave on low for 2 hours

Definitely Delia's recipe. If you chop everything in the food processor, it just needs to sit on the hob (or in the oven - I forget) for ages with the odd stir.

It freezes really well too.

Another recommendation for Delia. It makes loads but is very tolerant of scaling down.

I made it for Xmas for the first time last year and it was bloody delicious. I normally buy it. However, when I defrosted the rest of it maybe a week later it had completely lost all of its flavour, what did I do wrong!

I use Delia's recipe too. I use a mulled wine sachet instead of the spice mix as I think it gives a more subtle flavour.
I make it in the slow cooker now instead of the oven. It does freeze brilliantly so I make it ahead for Christmas and freeze some in takeaway boxes to go with roasts later on. I recently found some from last Christmas and it was fine 9 months on.

Whichever recipe you use, I recommend adding in a tablespoon or so of redcurrant jelly (or even better, homemade blackberry jelly) to give a real shine and fruity taste to the cabbage

Delias recipe but with added sultanas/raisins. Plus I cook it for an hour or so longer than the recipe.

Sauté red cabbage, a red onion, add an apple chopped, sultanas, brown sugar, balsamic vinegar, 3 cups water, cinnamon stick and a few cloves plus season with salt and pepper to taste. Bring to boil then simmer for an hour or until tender.

Freezes well!

If you add vinegar you have to cook it for hours. I use red wine instead.

Finely shred a red cabbage and a large red onion, grate an apple, add a small glass if red wine, a knob of soft or melted butter, heaped dessertspoon of soft brown or muscovado sugar, salt, black pepper and any spices you like. I often add nutmeg or all spice, caraway seeds or cumin seeds. Maybe some orange zest or chopped walnuts. Stir it all together and bake in the oven for at least 45 mins or slow cooker for at least 2 hours. It smells horrible half way through cooking. It is ready when the smell turns sweet.

Winter coleslaw: shred red cabbage, grate two carrots and an apple, maybe some red onion (I soak it in lemon water first to get rid of the very harsh taste - or leave it out) and add some toasted chopped walnuts, caraway or fennel or cumin seeds (or all if you like the mix) Toss the raw veg in a heaped tablespoon each of mayo and good greek yoghurt. Season with a bit of honey, salt and pepper. Or skip the aromatic seeds and toss in a vinaigrette of olive oil, lemon and orange juice and zest, a bit of french mustard, garlic puree, honey and dried herbs.

I love the idea of adding some home made blackberry jelly. Going to give that a try.

I found this on a blog a couple of years ago ( cannot find the link now though)
I am not keen on the recipes with apple and raisins in , so thats a plus for me .
It works really well, and is quick , and freezes well .
Luckily I copied it ( fairly basic instructions tbh )
Microwave Red Cabbage

one half red cabbage, shredded
one finely chopped white onion

plenty of ghee
salt & pepper
1 scant tablespoon sugar
3 tablespoons cider vinegar

mix well in a casserole dish
Microwave on high for 15 minutes , stir occasionally
Microwave on high for 2 minutes a time after this until cabbage is soft ( may take up to 25-30 minutes all in )
Check salt and seasoning
