Best lamb shoulder ideas pls (spiced)

I have 3 half shoulders of lamb in the fridge, I’d like to turn them into something for tonight or the weekend, maybe with some leftovers to freeze.

Any suggestions please? I would like something along Moroccan/persian lines, spiced flavours, have got most spices in.

No fruit ideally, never got my head around meat and fruit together. But happy to marinate.

If you have a tried and tested recipe I’d be most grateful.

I don't have a recipe but I do think lamb shoulder cooked long and slow with harissa and other spices is a thing of utter beauty! Enjoy your lamb.

I expand upon this recipe by going in a bit longer (4-5 hours!), so the meat is really fall-off-the-bone, and I uncover it during the last half hour to get a crispiness to the skin.

What I also do is lightly sprinkle lamb stock powder over the skin before I cook it.

By the way in return I can recommend Ottolenghi lamb with pistachio and figs - absolutely delicious but it is serious effort with lots of stages, and I’m after something easier this time!

I cheat and buy one of the Morrocan cooking sauces

The one with apricots is sweet but I use the meatball one for lamb

Mine is so quick to prepare but agree with PP that the longer you can cook the better.

I serve with flatbreads, tsatsiki sauce, pomegranate seeds and tonnes of fresh coriander yummmmmmmyyyyy

Just coming back to say I made this one and it was fantastic

I added some red onion wedges and carrots to cook in the stock under the lamb. Otherwise followed the recipe. Served with cous cous with herbs, pine nuts and pomegranate seeds, and some greens on the side. Juices were lovely!
