Rubbery pancakes

Don't know what I'm doing wrong but my pancakes all turn out a bit rubbery and nastily curl round the edges.

Does anyone have a fail proof recipe for thick, fluffy pancakes (not crepes)?

do you mean American style breakfast pancakes that you stack and have with syrup?

I think more like drop scones to have with butter, but happy to try the American style ones too (tried Nigella's American style recipe last week - disaster as batter was too runny)

oh well mine is loosely based on NIgella's but as she clearly never cooks any of her plagerisms recipes don't listen to her. It's a trial and error thing until you get the quantities right, go with her quantities of dry ingredients but start sparingly with the milk and melted butter and mix the batter until you think it's thick enough - usually like tomato ketchup.

oh and I always add a tablespoon of fine cornmeal/polenta to make them extra yellow and crispy on the edges. Once you crack it that 's the answer to breakfast time twice I wek, le me tell ya.

I think drop scones are very rubbery by their nature

heap the spoonful/s of baking powder too.
