Anyone making bone broth/pho?

BeLoftyTurtle · 15/09/2024 00:19

I really like eating pho and want the nutrition of bones.

I have tried it once and think I stopped the slow cooker as nothing seemed to happen.

Any easy recipes? I'm low fodmap so no onion or garlic

Bones in slow cooker. Can be raw or cooked bones but roasted bones will have the most flavour.
Add in some veg if you want. Carrots, onion, celery.
Add couple of tablespoons of apple cider vinegar
Fill to the top with water and put on. I put it on high for 1hr and bring to boil then put in low for 24hrs.

Remove and discard bones and veg.

Never failed yet.

Sorry just reread you can't have onion. Veg is completely optional in broth. So put in whatever you want or don't want.

So If I get a cooked chicken from Costco and use the bones it will be ok?

For chicken broth I usually use 2-3 carcasses.

So when I cook a roast chicken I strip the carcass and chuck the bones in a freezer bag and freeze. I often add veg scraps to the bag over time too. When I have enough I chuck it in the slow cooker.

You probably need the bones to make up between 1/4 and 1/3 of the slow cooker.

Cooked bones are fine to use , just make sure they are heated through properly then simmered for however long you want .

I don't generally use my slow cooker, I normally do it on the hob and reduce the liquid by about half on a slow simmer.

Imo it's not worth doing it with just 1 chicken carcass, I frezze at least 2 or 3 until I'm ready to make a lot .
I don't add any veg or herbs, I add them when I use the broth later.

Finally don't do my trick , freeze 5 lots of bones, simmer for 4 hrs , strain into a colander with all the broth going straight down the sink !

The bones from a cooked chicken are fine.

I don't use the slow cooker, just a saucepan and do it for a couple of hours, sometimes topping up with water.

I also leave meat on the carcass a lot of the time, we generally eat the breast and wings so the legs and things have meat on them.

I make chicken broth all the time

In the slow cooker or on the hob

I add pepper corns, salt onion and carrots and celery if I have any to the bones, skin, anything left over from the roasting tray that's chicken related.

On the hob Bring to boil then simmer for 2-3 hours let it cook then strain

Slow cooker just chuck it all in and I leave it on low overnight

I prefer stock I simmer on the hob to the crockpot tbh

I let it cool down for an hour before I strain it

Yes boned from a pre cooked supermarket chicken will be just as good
