Jazzing up steak?

DP loooves steak, buttery mash and minted peas. He wants it tonight, pah. But is there anything I can do to add a nice twist to the steak rather than just salt and pepper then watching him drown it in ketchup?

Nothing too spicy - he's abit of a wuss when it comes to spices. But would be interested to see what I can do to liven it up abit cheers

what about a creamy black pepper sauce? Not too spicy, but nice. Or a bit of crushed garlic.

I was watching Nigella on Saturday Kitchen this morning. She cooked the steak plainly, then put it in a "bath" of juice and zest of a lemon, olive oil, garlic and thyme, with a bit of salt and pepper for about four minutes each side. It looked lovely.

I love peppercorn sauce with steak but the furthest his pallette will let him come to sauce is ketchup

I was thinking of something that I can maybe marinade the steak in before cooking it rather than an actual sauce to go on it? But i'm abit crap when it comes to herbs and spices and what compliment what etc

I do sticky red wine shallots to go with ours.

shallots (or onions will do) sauteed in butter (or oil if you prefer) with rosemary and a little garlic, and black pepper.

Then about 1/2 pint of beef stock and the same of red wine. Keep on a high heat until it reduces (takes about 20 mins).

Once steak is cooked dump a load on top to serve.

It's beautiful.

serendipity has posted what I was going to say, a nice cfreamy black pepper sauce, I think most large supermarkets sell it in the freezer cabinet, Colmans do one in a packet, this is the only Colmans item I buy, and the only packet stuff I buy as I prefer to make from fresh. Its very nice and not at all powdery. I've never tried to make it myself.

I'm gonna go with armadillos recipe - sounds lovely, and DP agrees and has agreed to give the ketchup a miss in favour of it thank youuu, i'll let you know how it turns out

IF you erm, put it on and forget about it and the pan dries out (not that I have ever done this, oh no and it was definately not when had friends over for dinner) just pour in extra wine and it'll be fine.

another one to add

we marinade ours in teryaki sauce with the addition of chargrilled chicken seasoning by shwartz. Then griddle , makes it sooo savoury and yumm.
