What to bring for dinner - several obstacles!

Hi, I'm looking for ideas of meal to bring to my mother in law's Sunday. Here are the obstacles:
She doesn't eat spicy food, so no chili or curry
DH is lactose and gluten intolerant
DH can't have chickpeas or lentils
MIL only has an air fryer, small 2 ring hob, slow cooker and microwave so may be hard to heat things up
DS is very fussy and easiest thing is to bring a pack of sausages for him!

Was considering doing a gf quiche, loaf of nice bread (I bake) salad stuff, make a coleslaw, maybe roast some peppers, make some wedges... Dunno. It seems boring

Anyone have any better ideas? Thanks

Jacket potatoes could be cooked at home and reheated in the microwave, or cooked from scratch the the air fryer depending on how big it is and how confident you feel using it.
You could take a range of toppings for them - pulled pork (I use this recipe https://recipes.lidl.co.uk/recipes/apple-and-cider-pulled-pork-with-jacket-potatoes and it’s easily reheated on the hob, or in air fryer or microwave with a splash of liquid), baked beans, caramelised onions, grated cheese, coleslaw

I’d do a soup or stew of some sort: beef stew or a chicken and wild rice soup. Bring some nice bread and butter (GF for Dh). And some extra salad/picky bits for ds if he wouldn’t eat bits from stew.

Could you do a sausage casserole? You don't say how far away MIL is but you could make at home and reheat on hob. Just check sausages are dairy and gluten free. Serve with mash reheated in microwave and tenderstem broccoli (v quick to cook).

Make a crustless quiche (maybe sausage check sausage is GF and go crustless to avoid gluten or another spicy one) and maybe a more bland cheese and tomato quiche. Take along some picky bits cooked meats, salad things, potatoes or GF pasta salad etc.

Homemade bread dips and some GF bread for DH.

We always order in at hers (for obvious reasons), but it's never very nice and she doesn't get to eat home cooked food often! She has mobility issues and eats a lot of ready cooked stuff

Thanks all! Pulled pork and baked potatoes was my number 2 idea, and some sort of chicken stew was number 3... Guess I'm on the right track with all my many limitations!

Does anyone have a great stew recipe?

The obvious thing is a casserole which includes all the vegetables : so beef Bourgogne ( has carrots and mushrooms, onions) , coq au vin, poule au pot (onions, leek, cabbage, carrots) ….they are best cooked the day before and reheated slowly, use a metal casserole so it goes on the hob. You could have boiled small potatoes with it. Then you can have a sumptuous dessert which I expect you know how to make according to restrictions.

Do you have time to cook at her house?

I would do a roast chicken, cooked at home to be ready shortly before you leave and just covered in foil to rest and keep warm. Then a vegetable risotto which I'd make there to serve it on and some steamed greens.

I'd probably make a cottage or Shepard's pie in advance and just heat up in the microwave. Some extra veggies done on the hob.

Air fryer roast chicken is great. If you're not confident a whole chicken will fit, joint a chicken (or buy thighs, quarters, whatever). Simple marinade in lemon juice, garlic and oregano (longer the better).

Whole chicken - about 1 1/4 hours in mine (first half of cooking time, breast side down). Portions should be done in 30 mins (maybe a bit longer) - I just temp check.

Serve with salad, slaw, bread, potato salad, etc
