What do they really love to eat, and do they have any restrictions?

NoEscapingMe · 04/09/2024 20:04

No restrictions at all. He does like meat but I'm not overly confident doing a joint for example. I've already done things like cottage pie, beef stew, chilli etc and followed recipes to the letter. I'd prefer to do something I can prep while he's at work and finish if when he's home. We like to chat about the day before dinner and often have a sneaky little drink prior to our evening meal. Also, thank you from r the reply.

I made this for the first time several weeks ago, and it was absolutely delicious and so easy. It's like a risotto but much simpler. I've also made it again and used chopped asparagus instead of spinach. You could also easily use grilled sliced chicken.

Creamy Lemon Garlic Orzo with Prawns – Skinny Spatula

A creamy lemon garlic orzo with prawns is the kind of meal I long for at the end of a busy day. It's a one-pot meal that's creamy, comforting, and packed with flavour. What's even better, you can have it on the table in a bit under 30 minutes!

Mary Berry’s Chicken Tartiflette on the BBC website might fit your criteria. (Brie is easier to source than Reblochon and is a good substitute.) Try also her express lasagne which never fails.

This is lovely yet simple and can be prepped in advance www.sainsburys.co.uk/gol-ui/recipes/prosciutto-wrapped-baked-mozzarella-chicken

I’d do the following lamb rumps (really easy- in oven for 15 mins) with green beans and garlic butter and roast new potatoes. They also go really well with giant couscous and feta salad (roast red peppers, cucumber, herbs, lemon zest and oil- loads of recipes online).

Or bbq pork belly- stick a pork belly joint in the oven in a tray for a few hours on 150. Take out and cool and slice an inch or so thick. Brush with decent quality bbq sauce and put back in to caramelise (around 15-20 mins at 170). Serve with coleslaw, fries or roast potatoes or in soft bread rolls and salad.

Or chicken fried rice using cold boiled rice fried in butter, 5 spice, soy, garlic, ginger, spring onions and roasted chicken thigh fillets cut up once cooked. I roast the chicken thigh fillets with a bit of chilli powder, salt and 5 spice. Service with any veg you fancy stirfried in sesame oil and soy and prawn crackers.

Salmon fillets with pesto or teriyaki on top and roasted in oven with roast potatoes or noodle stir fry is also good.

English Co cheesecakes for dessert!

I love good food and cooking but if someone else is doing it I’m just grateful to be cooked for!

This Nigel Slater is so easy and so tasty 😋 You can prep it and leave it to marinate in the fridge until needed. Then just do some veg - we've had it with chips but would be nice with pretty much anything I reckon!

As an okay cook, I use a lot of Jamie Oliver. His recipes tend to be tolerably easy, and tasty. Tonight I'm cooking his madras meatballs which my DC all assure me is amazing. It's also very, very simple.

Wren77 · 04/09/2024 20:33

Oh and we never bothered with preserved lemons or olives!

Thanks for the bbq pork belly recipe

Pleasure! I use about a 700g joint for 2 people with left overs and sweet baby ray bbq sauce. It’s such a quick and easy go to and easy to scale up if you’ve got guests. Plus the kids will eat it which is a bonus.
I season it well before cooking and the long and slow cooking is completely failsafe.

Starter: Melon boat, with slice of orange in cocktail as a sail (similar to a Viking long boat.)
Main Course: Pot Noodle (Bombay Bad Boy is my favourite, but you may want a different flavour based on your evening's 'theme') with a crushed new potato topping.
Pudding: Banana Angel Delight or Orange Viennetta (sort of co-ordinates with the Viking long boat theme).
