Due to a slight miscommunication with DH we have a LOT of mushrooms. Can I freeze them? Is there something fantastic I can put on the meal plan to use them? Help!

I’d make a big pot of mushroom soup as that uses a lot. And some garlic mushrooms with crusty bread. Or mushroom risotto

I but them in a blender and use them to replace mince in shepherds pie, chilli, moussaka etc.

Hungarian mushroom soup! The dill, the garlic, the lemon, the paprika, the creme fraiche…. So much to love in one soup.

Stroganoff is another yummy dish that utilises lots of mushrooms.

I'd imagine if you cooked them down they'd freeze fine (and take up much less space!). I'm pretty sure you can buy sliced frozen mushrooms?!

A good mushroom soup uses tonnes and freezes nicely for the upcoming chilly days.

Mushroom stroganoff? Chicken and mushroom pie? I love a mushroom bhuna. Suppose it depends how big a fan your house is of them!

How many is a lot?
I find mushrooms can go a bit rubbery when frozen but I think if they are blended in a soup or very finely chopped in a sauce etc they should be fine.

finely sliced or chopped fried mushrooms freeze well, certainly well enough to chuck into a stir fry, lasagna etc. I fry them to 90% cooked with only a little bit of oil and then freeze in single portions.

I make a lovely savoury mushroom strudel, I make a rich, creamy and very thick mushroom pie filling (just use any one you like which uses a roux so the mixture isn't too wet, ideally) dollop it on the middle of a puff pastry sheet lengthways and cut equal lines each side, then fold it over the filling and fold each end up to create a rectangular parcel. Then glaze with egg wash and sprinkle over some grated cheddar and bake until golden brown. Put it on a tray lined with baking paper as some of the filling may leak out during cooking. Serve with roasties, chips or a salad. Delish.

I'd dry them, spread out on a baking tray in a very low oven until dehydrated.
Then store in an airtight container when cool.

Lots - two of the massive punnets you can buy plus half a box neither of us realised we still had in the fridge when we both bought mushrooms. We do like them a lot but one kid won’t touch them unless it’s from my plate and the other is hot and cold about them so realistically just two of us to eat them

I cooked and froze them into a muffin tin so I have mini mushroom portions I can add to things. They are one of those vegetables that I often waste so this way ensures I don't.

The best way to prepare them for freezing is to slice and then fry them first. When cold, spread them out to freeze, then bag when frozen.

Then they are ready to use in risotto, pasta dishes, chicken pies, pizza topping, sauce for steak, quiche etc etc.
