I have a kilo of ripe raspberries and no jam sugar. And no cream. What can I do with them?I have to do it today- they will be over by tomorrow. And it's just me home so I don't think I could just eat them....

Don't they go all mushy? But I could still make jam, I suppose....

They do go mushy when defrosted, but still good for jam or crumble or compote or smoothies.. I also like eating them frozen, little icy treats.

I don’t use jam sugar for raspberry jam, I use a bit less than the weight of the fruit, so 1 kg of raspberries aprox 800 g sugar.

Put some in the freezer whole, maybe split between different containers, they will mush a bit but okay for smoothies and fruit compotes.
Blitz some in blender or food processor, strain and add a bit of icing sugar, raspberry coulis which can be used as a sauce with other fruits or ice cream. Freeze in ice cube trays so you can use it a bit at a time.
Make raspberry and white chocolate muffins.

They freeze quite well - not like strawberries which do go to mush. You could also make a coulis by heating gently with sugar and straining. Freeze in portions for ice cream or drizzling over cheesecakes etc.

poach them now and put into freezer, you can defrost them when you've got some sugar & pectin.

Freeze them. When you have some sugar (and maybe a slosh of Cointreau) make some raspberry sorbet from them.

Or make a sauce now for the fridge and add jam sugar or icing sugar (for a couli) in a day or two when you’ve had a chance to buy some.

My parents freeze theirs, they do go mushy but they're fine to cook with or make jam

The raspberries in my garden have gone mad and have no choice but to freeze them. I'll use them in overnight oats or porridge over the winter, so doesn't matter too much if a bit mushy.

Freeze them and then you’ll have plenty for fruit salads, jam, smoothies, porridge, etc.

We grow raspberries and they freeze great, come out looking freshly picked (assuming you don’t mush them loads before freezing). I use them in all of the above until they’re gone. Don’t wash them or do anything with them, just straight in the freezer.

Make a coulis then freeze until you go out and get/make meringues, cream, scones, ice cream, or whatever floats your boat. We're buggers for swiping handfuls of raspberries on our way out or in, so I only get to make actual raspberry treats a few times a year. It's not often there are enough left.

Mash them up, spread them out on grease proof paper. Drizzle with peanut butter and dark chocolate (sperate layers) freeze. Once frozen break up in to pieces but keep in the freezer. Really tasty snack to take out and let defrost when needed.

You can make jam with normal sugar. Add the juice of a lemon to help with the setting, as raspberries are low pectin.

I have a glut of lemons, I’d love to have too many raspberries!
In your case I would make Eton Mess, a glorious Summer pudding, or vanilla and raspberry muffins (extra for the freezer when the season is over).

I did that a few days ago and made them fancy by scooping out the middle and spooning in homemade lemon curd (see pic for microwave recipe) like lava cakes. Good enough for midweek Summer dessert.

Easy jam recipe uses granulated sugar and lemon juice with the raspberries. I had 700 grams of fruit which made 3pots of jam

An apple will give you enough pectin in the boil for jam. Honestly I’d put it in and fish it out as a cooks treat.
