Cooking salmon

It’s my hubby’s birthday in a couple of weeks and I’m doing his favourite roast pork with apple sauce. It will be with the usual side - roast potatoes / Yorkshire pudding’s / steamed veg probably tender stem / carrots etc.

The question is, my DIL and I don’t eat pork so I was thinking about getting us a nice piece of salmon. Sooooo how big a piece for 2 people (I like to be generous and left overs isn’t a problem 😂). How to cook, I’m thinking wrapping in tinfoil with some seasoning/lemon ? Then would it go with the roast potatoes/steamed veg I’m doing, and what about a sauce ?

I don’t cook much fish as you can see, salmon is her favourite, I normally just do cod or haddock which I pan fry, or a small piece of salmon for me which I steam. I really want to get into cooking more fish

There will be too much fish for two but I always use the leftover salmon for fish cakes the next day. You could make a parsley sauce to go with it.

One fillet would be plenty for most people assuming you are also doing loads of sides. You could always do 3-4 if you want to be absolutely sure you have plenty and you can make it in a salad for the next day’s lunch.

I always baked salmon uncovered (not wrapped in the foil) as it crisps up a bit nicer. I do a soy, sesame oil, honey glaze or you can do some Dijon mustard, honey and lemon. Bake until slightly browned on top and caramelised.

I don’t do sauces other than the glaze. A nicely cooked bit of fish should speak for itself.

I put in foil with lots of lemon juice, and a little salt and cook for 22 minutes in the oven. Delicious.
