Hi there,
I'm hoping someone can give me some inspiration as my current menu doesn't feel right but I am struggling somewhat to do that.

Issues: 1 gluten free (but ok about gluten on table)
4 veggies (1 prefers vegan but it's a preference not a need)
1 request for the courgette dish

Other issue is I am solo with a small kitchen and cannot prep much ahead of time. And can't get all my normal ingredients as in Brussels - so curry feast not a runner etc and also cannot BBQ.

Due to gluten issues, I plan rice as the base and 2 or 3 sauces:
Chicken and mushrooms w/white wine & cream
Chilli (probably con carne as I don't know I'd get a bean one right)
Something with. Roasted butternut squash or roasted Mediterranean veggies

Lots of salads
Green
Tomato, feta and cucumber or tom/mozarella
Couscous with roasted veggies
Potato salad
Bowls of cherry tomatoes and diced peppers and olives
Hummus (and maybe guacamole), salsa
Hot lemony courgettes with Parmesan panko top

Sausage rolls
Crisps

Cheeseboard and crackers
Big bowl of fruit salad
Something from local bakery
Probably will have ice creams in freezer for DCs

My main worries are have I enough for DCs (aged 2-13) and is it too mish-mash?
If anyone has ideas to make it better, especially with recipes (especially for a nice veggie dish with rice/salad - I'm having a brain freeze despite eating lots of veggie as it usually involves pasta).

If you're doing rice and hot toppings I would really not do all those salads but one mixed green salad and a tomato and onion salad that works well with both.
Seems like you're making work for yourself.
I'd keep some chicken plain for the very young kids with rice and do the courgettes if specifically requested.
A big bowl of berries and shop bought meringues with cream for pudding.
Keep it simple but plentiful in my book .

I would do the burnt aubergine chilli for vegetarians on bbc good food site but make plenty as it's very popular!

Couscous isn't gluten free, so I'd leave that out, as you have the rice anyway

With rice you don't need potato salad and cous cous. Use a vegetarian alternative to Parmesan for courgettes so veggies can eat them too.
Make your chilli veggie. You will pick beans up easily but you can bulk with peppers and onions if needed.
I wonder if the children would prefer chicken in honey and mustard sauce over cream and mushroom?

BBC good foods easy veggie chilli is an easy win.

For twenty that's way too much I think. Go bulk with veggie chilli and potentially something like a pulled pork that will go in a wrap. Everything you do works together to go in a wrap. Keep it simple. You can get gluten free wraps. Two salads. Then dips / sauces that can go with wraps. Forget rice. Tray of roasted veg. Then olives and tomato and feta as nibbles before.

I’d go

  • base rice with chickpeas
  • 2/3 roast chickens (lemon cumin and garlic olive oil)
  • med veg
  • your courgette
  • hummus with crudites
  • green salad (lettuce, peas, spring onion, avocado)
  • red salad (tomatoes, kidney beans, red onion, etc)

your desserts sound fine

Thank you all - I'll refine tomorrow when I am sitting on a train for a couple of hours - but better to hear I'm over than under doing it
