Your most impressive/stunning pudding

There are 8 of us; we all take turns to host dinner and have split the cooking. I always do the puddings and have done everything from banana tatin (delicious but nearly set fire to kitchen ceiling) to dark dark chocolate browies with nigellas banana icecream with dark choc chunks in. We are dinnering azain this sat - two of the femmes have birthdays. I am out most of the day and seem to have baby clamped to bosom when am at home, so am desp looking for something celebratory and damn fine - but v quick and easy to make. Dh hates chantilly or lashings of whipped cream, and they are all french, so trfle is a no no, ditto cheesecake (neither ever seems to go down well, even as novelty factor).

Help please!

Saw a good one in this months Red which I may try: basically poached rhubarb with finely chopped stem ginger, served up with (ready made of course) baby meringues and cream to which you have added a bit of the ginger syrup. Should be quick, unusual and with all the time saved you can arse about making it look pretty. Go and have a shufty in Smiths - can't be more detailed on quantities I'm afraid!

Blackberry and Apple Crumble? - yummy, takes 10 mins to create and can prepare in advance.

I've made a recipe for a chocolate meringue stack thingy, sandwiched together with choc goo and sprinkled with bright green chopped pistacios - looks great.

You can make 24 hrs in advance and assemble at the last minute.

I can dig that out later if you fancy it.

If you need something impressive and quick, then you could maybe think about stacking up something like brownies in a huge heap, and sticking loads of candles and mini sparklers in it. Looks very effective, and if you are really strapped for time, you could always buy decent brownies/ blondies/millionaires shortbread etc. Would suggest profiteroles or little meringues sandwiched with cream, but these won't work if you can't use cream!

Excuse the hijack... CeilingCat, do you have a tried and tested Tarte au Citron recipe please? Also Iced Lemon Meringue cake DizzyDixies?

ggglmpp - might be similar to Dizzy's cake, but I like Nigella's lemon meringue icecream, which can be made ahead, served with warmed soft fruits (frozen fruits work ok)

That looks lovely Bella- it reminds me of another Good food one for a chocolate salami which is chocolate, apircots, crushed amretto biscuits and nuts which you serve in tiny slices. Delish!

Happy to oblige! Have to give Nigel Slater the credit though.
1kg Bramley apples
30g butter

125g soft white breadcrumbs
100g light brown soft sugar
100g dark chocolate, roughly chopped
75g butter, melted
3 heaped tablespoons golden syrup

Cut the apples into chunks, put in pan and toss with butter and couple tablespoons of water over moderate heat until apples start to soften. Put into baking dish.
Mix crumbs, sugar and chocolate together and cover the apples.
Melt butter with golden syrup then pour over crumbs, making sure to soak them all.
Bake 190degrees for 35 mins until crumbs are crisp.

Absolutely devine served with cream or ice cream.

queen of puddings. Totally delicious and totally easy.

It's much much more delicious than its simple ingredients suggest. This is Delia's description and recipe:

This, with a cloud of meringue on top, is probably one of the lightest and most mouthwatering puddings ever invented.

Serves 4

Ingredients
1 pint (570 ml) milk

½ oz (10 g) butter

4 oz (110 g) fresh white breadcrumbs

2 oz (50 g) golden caster sugar, plus 1 teaspoon

grated zest of 1 small lemon

2 large eggs

3 tablespoons raspberry jam

Pre-heat the oven to gas mark 4, 350°F (180°C).

You will also need a 1½ pint (850 ml) oval pie dish, generously buttered.

First, pour the milk into a saucepan and bring to the boil. Remove from the heat and stir in the butter, breadcrumbs, 1 oz (25 g) of the sugar and the lemon zest, and leave for 20 minutes to allow the breadcrumbs to swell.

Now separate the eggs, lightly beat the yolks and add them to the cooled breadcrumb mixture. Pour it all into the pie dish and spread it out evenly. Bake in the centre of the oven for 30-35 minutes, or until set.

Meantime, in a small saucepan melt the raspberry jam over a low heat and, when the pudding is ready, remove it from the oven and spread the jam carefully and evenly all over the top.

Next, using an electric hand whisk, lightly beat the egg whites in a large scrupulously clean bowl until stiff, then whisk in 1 oz (25 g) of the caster sugar and spoon this meringue mixture over the pudding. Finally, sprinkle the teaspoon of caster sugar over it all and bake for a further 10-15 minutes until the topping is golden brown.

Note If you want to serve 8 people, double the ingredients, use a 3 pint (1.75 litre) baking dish and give both stages a fraction more cooking time
