Chicken thighs for the bbq

We didn’t bbq when I was growing up so I have inherited DH’s way of doing things.

Par boiling chicken thighs for 20 mins before marinating and then cooking on the bbq.

This method must be over 30 years old; is it still the right way?

If it worked 30 years ago, I guess it will still work.

Having said that I wouldn't boil chicken. I put chicken thighs in a lemon & garlic marinade the night before and then put them out to cook first, on the coolest part of the barbecue.

That means they are cooked through without burning.

We have chicken thighs on the barbecue all of the time and do t pre cook them. They open out so they are pretty thin. You could always give them a hammering. I just marinade them and on they go.

Why would you boil it and then marinate it?

Marinate it, then slow cook in the oven for a bit so its cooked then bbq it for the flavour

A meat thermometer would be a good idea if you're worried about doing them on the BBQ - pretty cheap to buy, I use ours loads.

I wouldn't pre-boil them before bbq. I would put them in marinade night before and then put them in bbq first and cook until they are done.

I've never boiled chicken in my life. Why wouldn't you just cook them straight on the barbecue?

Bung straight them on the bbq. No reason to boil them first. What a faff.

I spray with a bit of olive oil, salt and pepper and a sprinkle of mixed herbs. 6 mins each side.

I think it might be worth pointing out that some chicken thighs have the bone in and skin on and some are just fillets of meat rolled. If you have the type on the bone you do need to be especially careful to ensure the meat is cooked right through with no blood remaining next to the bone. A meat thermometer is a good way to check. The filleted ones open out and will cook in a very much shorter time.

I buy ones with bones in as they're so much cheaper and devine them, doesn't take long

I don't BBQ, but air fry or sometimes DS will fry but the don't take long when deboned
