Have just been browsing some lovely Casserole dishes and now feeling very Autumnal.

So what's everyone's favourite?

Simple and easy

Brown 4 Richmond (thick) sausages and 500g stewing beef. Add one small chopped oinion. Just cover with boiling water and beef stock cube.

Transfer to slow cooker for 8 hours.

Best way to serve. Transfer to pie rush and cover with puff pastry lid and egg wash. Cook in oven for 20 mins.

Serve with mashed tatties and neeps and green beans and peas.

Good old traditional beef stew (but also works with lamb).
500g stewing steak
1 chopped onion
3 chunked carrots
1 chunked leek
Tin butter beans
750ml beef stock
Tbsp tomato puree
2 tsp worcestershire sauce
2 tsp mixed herbs

Chuck it all in a pan for 1hr 45 mins. Serve with mash.

Pork with apple and shallots
Pork tenderloin, cut into pieces with shallots, parsnip, apple, carrots, garlic, herbs de Provence, cider and veg stock. You can also add potatoes

These are just the type of things I love. I have a great recipe for a lamb biryani and whilst it's not a casserole, it is one pot cooking and is very autumnal.

Quite like the sound of the Pork, apple and shallots Wink

I love my made up recipe!

Tin of green lentils. Beef stock pot. Good sausages. New Potatoes halved. Water.

Brown sausages in le creuset, add drained lentils, beef stock pot thing, halved new potatoes, and some water. Cover and cook on 160 for at least 30 mins. Remove lid to brown sausages more and new pots. (Keep checking on it, add more water if necessary). Check if potatoes are cooked

Takes about an hour or just over and is delicious

Paprika pork:

Pork tenderloin (whole small, 2/3 large, cut into thick slices) or pork slices (4)
onions 2 big, 4 small, chopped
red peppers 2 big, 4 small, seeded and chopped
carrots 2 big, 4 small, chopped
garlic 4 cloves, chopped
marjoram or oregano, heaped teasp (at least)
sweet or smoked paprika (heaped tablesp at least; more if liked - beware, though, some smoked paprika is very strong))
olive oil 2-3 tablesp
tinned chopped tomatoes 1 can
tomato puree 2 tablespoons
salt and black pepper
water - a mug-full, topped up as required

Put oil and chopped veg in heavy iron pan; cover and cook gently - approx 15 mins - until veg begin to soften. The onions should go golden but not burn.
Add meat and herbs and garlic and paprika. Stir or shake and cover and heat gently - approx 10 mins - until bubbling.
Add tomatoes and tom puree and mugful of water. Stir or shake again. Add salt and pepper
Cover pan with lid and simmer very gently over low heat for 2 hours or more. Stir from time to time and add a little water if the casserole seems too be getting too dry.
Re-heats very well the next day. (Allow to cool and store in fridge overnight.)

Serve with new potatoes and at least 2 green veg. If liked, sprinkle with chopped fresh parsley or fresh coriander before serving.

Short ribs in stout. BBCgoodfood has a recipe, but I use RecipeTinEats’ recipe for short ribs in red wine but replace the red wine with stout. Eat with buttery mash and cabbage.

Massaman lamb shank - technically a curry but more like a casserole as you just bung it all in and let it cook for ages. RecipeTinEats again.

Spiced lamb shoulder. No recipe but you brown the lamb shoulder and onions, add spices (cumin, coriander, cinnamon stick, peppercorns, bit of cayenne/chilli), garlic, bay leaf, stock, little bit of sherry & soy sauce and leave the whole thing to cook for ages. Add some chickpeas near the end. Eat with couscous.

Not sure it classifies as a 'casserole', but its a very thick, pea and ham stew. I do it in the slow cooker, but have also made it on the stove top.
-1 Smoked pork knuckle/hock- I remove the skin and loosely chop into smaller pieces. I've only found these in butchers.
-Whole packet of Quick soak dried peas. They only need 30mins of soaking, unless the regular ones which need overnight soaking.
-Throw in any veg I have- carrots, swede, potatoes, celery, onions
Cook till its a thick stew 😋

I've been looking at those! If I ever cook any of those recipes DH says "have you got your retro cookbooks out again".

Doesn't stop him scoffing the meal though Grin
