How to get my salmon caramelized?

I love it when I order salmon in a restaurant and the top ( not the skin) is crispy and caramelized. Anyone know how to get this texture? Thanks

Brush with a little lemon and honey and soy sauce and season, place skinside up in a frying pan and sear for a couple of minutes turn and cook a few more minutes.
you can finish it off in the oven but be careful not to over cook.

It makes a huge difference if it’s dry first I think (to the skin too)

It needs to be dry, then go onto a really hot pan for a few minutes, say 2, flip it over onto the skin for a few minutes, season, then finish off in the oven

I did a fish cookery course recently. They said dry skin, lots of oil, and cook it only on the skin side and baste with oil to cook the top. When say lots of oil, I do mean lots!

I will definitely try these suggestions- I wonder if it would caramelize in the air fryer? Just a thought

I like it that way too so I always use a dry pan as salmon is an oily fish anyway and release fat as it cooks, I put it skin side down first in hot pan and leave it alone until it's crisping up nicely then turn to flesh side and do the same. Trick is leave it alone, don't keep moving it around the pan, poking it, turning it or any of those things, it needs time and constant heat to develop the brown-ness, after doing it a few times you'll know exactly how long!
