Fish dish inspiration

I'm looking for inspiration to use various fish currently sitting in my freezer inc. ling, coley, witch, rainbow trout, haddock, skate, halibut.

What're your favourite recipes/dishes for using any of these fish?

I used to do a fish pie with coley. Cheese sauce, mashed potatoes on top, maybe add some sliced hard boiled eggs. Uses every pan in the kitchen, but yummy.

@Phineyj Thanks, yes, we love fish pie, and the weather atm is looking very fish pie like. Our family recipe is definitely suitable only for a weekend supper. Frustratingly, there are never any leftovers regardless of how much I make. I've tried other, quicker recipes, but never found one that hits the taste/effort sweet spot for us.

@Forgottenmyphone the haddock is not smoked, but there're a couple of smoked ling fillets. I'd normally use them in a paella type dish, but one of my kids has decided they don't like the paella any more, so we have it less often.

@Forgottenmyphone also, thanks for the trout recipe. I used to do a similar thing with salmon, so I'll definitely try that one out (and maybe add some chillies).

I'd try the halibut (or perhaps the skate wings, it needs a firmer fleshed fish) with apple.

Get the oven on and warming to medium-hot.
Saute chopped onion and chopped apple in butter until soft. Add a splash of cider to keep it loose.
Put the fish onto a buttered baking sheet, and put the apple/onion over the top.
Bake until the fish is cooked.
Serve with new potatoes and veg/salad.

This is a great recipe for any white fish. I've only ever made it with fillets.

Oil a shallow-medium depth glass dish with olive oil and lay the fish in it. Put some fresh tarragon, or other fresh herbs of choice, on the fish. Put some thin slices of lemon on the herbs. Mix 'raw' tahini with just enough water to get a thick pouring consistency. Mix in garlic purée and salt to taste. Spread generously over the fish to completely cover the fish. Bake at 160C until the tahini is crusty.

Good cold, though even better hot. Quite a rich dish, so serve with something like plain boiled potatoes or tiger bread, and salad.

This is more for prawns but maybe....??

Square dish.

Fill a quarter of it with seasoned and cooked off fish.

Fill another quarter of it with chopped avocado.

Another one with chopped mango - tinned will do if no fresh and ripe.

Last quarter with finely chopped red onion.

Dress with olive oil, lime juice, salt and pepper, fresh coriander (lots).

It's absolutely LUSH.

make a kedgeree with your smoked fish and if you have a lot of it, add some it to your fish pie filling too. I like to put a mix of fish in my pie filling along with eggs and cheese sauce. Usually a bit of smoked haddock or hake with some salmon or trout and a white fish like cod

I am an Aberdeen born girl. Haddock is my native dish. Above is one of my favourites.
That said, I mess around with the recipe and instead of capers and chives, I mix anchovies, basil , tomatoes and spring onions.

I also could substitute Halibut if I was lucky enough to have it.
