Self catering meals - UK break

Hello!

We are going on a longer-than-usual self catering break soon, in the UK. Usually we can get by for a week, but I'm struggling to think of easy but nice things we can have for 2, especially as we are going to be staying remotely (but have a delivery booked). It's just the two of us and to complicate things, I have coeliac disease (gluten free) so it's much more difficult to grab things. There will be a couple of small shops close ish but not larger supermarkets. Any suggestions so welcome! So far I have things like salmon/chicken with salad and pots or rice. We can't take fresh stuff from home unfortunately. Thank you for reading!

Is there a freezer? This year when we went self catering.
I cooked and took a chilli for first night and a spag bol I popped in freezer to use later in the week.
I did a lazy tea of bacon, egg, beans and toast one night and another a fresh soup and sandwich.
A roast joint and then left overs I popped in freezer and used served with salad and wedges later on.
I made a big curry at beginning of week and then froze the rest for the last night.
We also have gluten free in family and we found a chip shop that did gf (in a separate frier) so had this one day as its such a rare treat.

Would a meal delivery box such as Gousto be an option? I have a friend who always gets them delivered when on a UK break.

If there's a freezer then prep some meals and freeze. We took a cooler bag packed with ice packs and frozen home cooked food which was still frozen after 7 hours on the road.
I normally make and freeze a pasta sauce then boil some pasta or spaghetti, freeze marinaded chicken drumsticks to bake or cook on stove with chips or wedges, a bag of baby potatoes and eggs and beans, a frozen curry which I served with rice,
A chicken casserole which I prepped and froze then just cooked as we needed. 8 of us so we definitely needed nearly everything we took.
I also pre cooked some chicken with onions and peppers to make wraps for one of the days out.

What is the issue - are you going to try to have just the one delivery from a supermarket and then do little top-ups at the small stores, so you want things that can come from the store cupboard or will last from the delivery?

So you're away for 2 weeks in a remote location? And there's 2 of you to feed, and you don't want to shop more than once if you can avoid it? And you're not really going to be eating out much?

Assuming you have all normal cooking facilities and a fridge.

Big box of eggs, maybe 2, for omelettes and fritattas.
Couple of packs of bacon and GF sausages
Big bag of spuds and other veg
Pack of chicken breasts and a pack of mince
GF pasta and a jar or 2 of pesto
Bag of rice
Couple of tins of pulses
Baked beans
Spices and stock cubes
GF bread or crackers or whatever you like that will keep well
Cheeses and fruit

Main meals that I'd cook from those ingredients
Fry up with bacon, sausage and eggs with baked beans and a small jacket spud
Veg fritatta with potato wedges - leftover fritatta for next day
Big pan of bean and veg soup to be reheated as and when, with cheese and crackers.
Veg chilli with rice, make enough for 2 nights
Bolognaise or pesto pasta, make enough bol for 2 nights
Chicken curry with rice, enough for 2 nights

Basically I'd be cooking once every 2 days, and just reheating the second day. However, we don't mind eating the same thing 2 days in a row. Depends if you're prepared to do that or not.

I'd think in terms of what you can buy fresh for the start of your trip and what can go in the freezer (assuming it has one) for the second week......so any meat, fish, bread, pizza etc can be frozen and just top up shop with fresh stuff locally.
Pie (gf one for you), new potatoes or oven chips and a bag of prepped veg.
Bag of stir fry veg with a protein source and rice noodles.
Ready made lasagne (gf) with salad and garlic bread.
Fresh carbonara sauce with chicken & brocolli (and gf pasta).
Pizza & salad

When we went on a long holiday and I was trying to avoid the shops (just after lockdown), I did themed nights and ordered some special things to take with us.

Did a South African night with sausages, mealie pap, chakalaka. Did a French night with tinned duck confit and fish soup (jar) with bread and green salad. Did an American night with burgers, mac and cheese and s’mores. You get the idea.

Brunch for dinner is also a favourite: chipolatas, eggs, hash browns, croissants, fruit salad (I do a mix of tinned fruit cocktail and fresh fruit). Or pancakes and bacon. Or waffles and bacon. Make gluten free to suit.
