Roast dinner vegetarian main ideas please that would also be suitable for Christmas

We’ve friends coming over for the day on Sunday. Whilst they are decent cooks, they have never cooked a roast dinner but love them. When I asked them over, friend said ‘one of your roasts would be great’
One person doesn’t eat red meat so will be doing turkey if I can get one else chicken. Will also do pigs in blankets, stuffing, roast pots and lots of veg - so heading towards a Christmas dinner.
One of the friend’s DCs is vegetarian so am looking for ideas for their main to go with all the other dishes. Not a nut roast as I made one last time they came. Will cook some vegetarian sausages anyway since they won't be having pigs in blankets We might also have a different vegetarian guest at Christmas so a good opportunity for a trial run of something Christmas Dinner appropriate. Preferably something that can be made ahead.

That butternut tart sounds very tasty, I'm looking in our cupboards and wondering if it would work with sweet potato too now.

I hate sweet potato, but I'm sure that theoretically, it absolutely would. I think the dressing would be even more important - I find sweet potato does need that little bit of sweetness/tartness added.

This is a really nice sweet potato and feta pie. Super easy. I used a lot less fennel seeds than suggested as I think fennel can be overpowering.

Some lovely ideas here! Two things: don’t forget how filling vegetarian mains usually are, especially served as part of a roast dinner - things with pastry served with roast potatoes can be a lot - maybe try a filo pastry parcel? And go large with gravy - you need some good rich flavours to make up for lack of meat juices, so onion gravy always a good one.

Tesco do a vegetarian Pecorino. All supermarkets do an own brand parmesan style cheese and they are vegetarian.

My favourite vegan/vegetarian roast dish is a massive portion of Paxo. I’m a heathen. I prefer it to actual meat stuffing or the chicken.

@SummerSplashing oh I know but am trying to lose weight ha ha and I want to make a pudding too (probably apple crumble with apples from our garden).

So many lovely ideas. DH and I are trying to eat more meat-free meals, so many things that have been suggested that I am going to make for us, let alone vegetarian guests!

I agree - just extra (veggie only) stuffing. I hate having a roast dinner spoilt by the host brandishing some weird and wonderful veggie thing they’ve gone to a lot of trouble for, which just makes you feel pressured to eat it all.

The vegetables, extra roast spuds and stuffing is enough! (For me anyway - vegetarian for over 30 years).

I'd sack off the idea of a veggie main and just focus on really excellent veg side dishes and plenty of them. That's the experience I've had from over 10 xmasses with at least half of the 12 attendees being veggies. People have brought nut roasts, mushroom wellingtons, furkey, other fake meat, various versions of pastry things and they were all barely touched with everyone saying how much they loved a plate of the sides. We usually have
Loads of roast potatoes
Cauliflower cheese
Roasted sprouts with garlic and lemon
Parsnip and carrot roasted in honey
Minted peas
Lentil, beetroot and feta salad
Yorkshire puds
Gravy with a load of caramelised onions in.

Starters is usually spanakopita, bread, dips and cheese.

Round here, any of the chain carveries would offer a "everything but the meat" dinner, for about £5. You could also have the normal carvery, or a vegetarian main meal alternative.

I make vege pigs in blankets, nut roast, and vege stuffing, for actual Christmas. + red wine/panchetta/mushroom beef, turkey and all the normal meaty things.

I loving for Christmas.

However, if you're not having Yorkies, then I love puff pastry brie and cranberry tarts (my cranberry sauce is made with cranberries, port, orange juice and sugar), or Stilton and chutney short crust tarts (chutney made in the autumn with the apples/pears from the garden).

I usually do a vegan mushroom wellington - Waitrose do one that veggie DS loves in their frozen food section, and it goes well with all the usual trimmings of roast dinner.

Or a baked camembert studded with rosemary and garlic.

Or brie and cranberry sauce in a puff pastry casing.
