We love pad thai (no egg, but with veg and tofu) from our favourite take away. It's one of the few things that my kids will eat too. Would love to replicate it at home, but so far any attempts have been poor! Are there any decent recipes out there? I'm not even sure which noodles to use (presumably not egg ones, as the pad thai at our take away is vegan when we order without the egg). And the sauce/marinade?? I'm guessing that's the special bit that makes the difference....
