Need help with quick food ideas

Hi all,

I have an 11 week old LO who is the absolute light of my life!

Just looking for some quick and easy recipes to make for me and the other half and wondering what you all ate during this time.

I prefer to buy bags of chicken, mince meat, meatballs etc but struggling to think of any actual quick meals other than things like chilli/spagbol or curry.

Does anyone have any suggestions that hopefully won’t take more than 30 mins in the kitchen?

Really struggling with ideas here on what to make.

For these few months I'd go for mostly tinned, frozen and microwave basics with pre-prepared veg and salad.

  1. Frozen mixed stir fry veg/ prawns with straight to wok noodles and pouch of sauce like garlic and sweet chilli.
  1. Microwave 2 min rice, jar of curry sauce, pre cooked chicken cubes and pre prepared veg like frozen onions, peppers, tin of sweet corn.
  1. Pasta with jar of tomato sauce, tuna and sweetcorn.
  1. Fry up done in the oven- rashers, sausages, pudding, waffles served with beans and fried eggs.
  1. Cook extra rashers from fry up to have BLTs and tinned soup the next evening.
  1. Pitta breads done in toaster with falafel (from supermarket chilled cabinet) hummus, cucumber, tomato and lettuce.
  1. Pizza, chips, garlic bread in the oven with coleslaw and salad.
  1. Pasta Carbonara- mix grated cheese with a beaten egg and pour over cooked pasta. Nice with cooked broccoli, mushrooms and bacon pieces with lots of black pepper.
  1. Omelette with frozen peas and waffles done in the toaster.
  1. Or Spanish omelette which includes cooked potatoes, onion and tomatoes. Put it in the pan and shove under the grill to cook the top quickly.

I did a lot of basic roast dinners when I was at this stage, but it was winter at the time!

A whole chicken or piece of lamb/beef/pork in the oven with large-chopped potatoes, carrots, onions, etc and let the oven do its work. Maybe heat some frozen peas and job done. Might even leave enough meat for sandwiches.

You sound like you're doing pretty well, enjoy your bub :)

Me and D's had stir fry last night - pre chopped chicken and veg plus fresh rice noodles. Less than 15 mins from opening the fridge!

It's an expensive way of doing it but I've got a health condition that makes standing for long periods difficult so needed the convenience. Dh is away and he usually cooks!

Stir fries are fantastic for a quick and easy meal.. I like to chop fresh cauliflower, broccoli, carrot and baby corn and place it in a bowl. Pour over boiling water, leave for 1 minute then drain and set aside.. I make my sauce in the morning and store in the fridge in an airtight jar. All I really need to do is velvet my meat then heat up the wok. Toss in the meat, sear on all sides on a high heat thrown in sliced onions and minced garlic and stir fry pour in the sauce let it simmer then throw in the blanched veges. Give it a stir then serve it with steamed rice. I always make extra rice so the next day I can make beef and vege fried rice.. So quick and yummy everyone gets the vegetables proteins and carbs but most of all full happy tummies.
