Low carb lunches I can take to work

pintofsnakebite · 14/08/2024 12:01

I want to eat better at lunch rather than grab a meal deal.

I have access to a fridge and a microwave at work, and ideally would like things that I can keep in freezer and just grab.

Ideally not ones that stink out the rest of the office (no fish!)

Best ideas please.

Frittata (basically omlette) with a side of tomato salad? Those are filling and delicious.

ZanyFox · 14/08/2024 12:08

I take a chopped chicken salad and some full fat greek yogurt and berries. Also a pice of cheese. Non smelly and filling.

Love frittata. When do you make them though? I don't want to faff about too much in the mornings.

Mix green lentil salad?
Cook green lentils according to packet instructions (I do mine in a stock cube)
Cool, then add chopped cherry tomatoes, spring onion, diced pepper, chopped gherkins, any “pickly” or anti pasti type stuff you have. Add some nice balsamic and salt n pepper.

I make a big batch on Sunday and take portions then add some protein separately just before eating (chopped leftover chicken, prawns, salmon, feta). Keeps very well.
Take out of fridge for hour before serving to get maximum flavour. Very filling.

Mum to a Type 1 Diabetic child for the past 9 years working with dietitians for the past 9 years and carb counting for 9 years..🙋🏻‍♀️

My go-to low carb meal is a homade seared chicken breast with avocado and mixed salad (mixed lettuce, cucumbers, purple cabbage, carrot, olives, fetta cheese, Spanish onion) with a homemade dressing (fresh lemon juice, olive oil, fresh minced garlic, salt, oregano) I don’t add tomatoes as they contain carbohydrates..

Freshly squeezed lemon juice lowers the GI Index of food too..

They’re fine made early and kept in the fridge-they’ll last 2/3 days in the fridge.

It’s so hard to get out of the sandwich for lunch mindset isn’t it! I’m able to keep eggs in the work fridge to scramble in the microwave-can you do that? A portion of any meal you make to the and heat in the microwave…a tasty mix of salad is also good..ratatouille…anything like that

My go to salad just now is finely chopped lettuce, cucumber, pepper, jalapeños, spring onions, cherry tomatoes, sweetcorn and feta cheese, bound together with a dollop of coleslaw…swap out the feta for cooked chicken or other protein of choice

Also do a similar thing with brown rice - pretty much same process. Cool rice quickly and don’t overcook or it’s mushy.

Depending how low carb @pintofsnakebite wants to go ...

Lentils and balsamic are actually quite carby

... also probably too carby for a low carb meal

Edited

And I drizzle balsamic dressing over it on serving 🤤

You can buy low carb bread/bread rolls:

this is really good

That said, it's not cheap, so you won't want to use it every day I don't think, but it's the closest thing to 'real' bread I've found. Great to be able to have a sandwich every now and then!

Yeah rice and lentils are too carby for me.

I chop up a grilled chicken breast, some lettuce, avocado, cucumber, some cold cooked broccoli left Iver from dinner, celery, and dress it with olive oil salt and pepper. All chopped quite small so it can be wolfed down easily.

Sainsbury's balsamic vinegar - 21.6g carbs per 100ml
Sainsbury's red wine vinegar - <0.5g carbs per 100ml

Though OP was looking for healthy alternative to sandwich. Post didn’t mention carbs?

redalex261 · 14/08/2024 13:14

Sorry, except in title…

That sounds delish!! Taking a screenshot of that and making it for my lunch tomorrow!

Something in mayonnaise with celery dippers. Boiled eggs, tuna, chicken, whatever. Mix with mayo, scoop with celery.
