Easy bulk bakes?

Organising a bake sale at work. Going to do the standard shortbread, chocolate cookies, cupcakes, a lemon drizzle, Victoria sponge etc.

But looking for some easy bulk bakes and also considering some more fun things (flavoured shortbreads, fun cupcakes e.g. salted caramel) and need basic recipes I can adapt.

I'm a huge baker but tend to do the same recipes for large cakes etc., and never make smaller things

What about scones, Madeira cake, brownies or ginger bread. All easy to transport for work.

These custard cream blondies are quite fun and it it would be easy enough to do a few trays.

Edd Kimbers chocolate sheet cake with whipped salted caramel ganache frosting is really delicous. The frosting is a little more involved than a standard buttercream, but worth it. As it's a large single layer sheet cake its makes a good amount of portions but feels less fiddly than cupcakes, which I find more finicky to than swooshing frosting over a large cake. I skip the peanuts on top (hate them) in favour of mulit-coloured sprinkles which look fun and also reduce allergy risk if taking into work.

Why don't you try a Mary Berry style tray bake which can be cut into multiple slices? In her Baking Bible, there are multiple variations .

I always add a rocky road when doing multiple cakes for school or similar. Really easy, popular and something that doesn't need the oven.

Sultana cookies. I use Recipie tin's recipe and adapt for quantity.
I like her recipes and she does chocolate cookies as well.
