We have a gorgeous farmer's market near us that sells the most amazing variety of herbs. Can anyone suggest any recipes that use lots of fresh herbs - looking for meal-type recipes rather than pesto/gremolata/tabouleh or similar

I like this pearl barley dish which needs fresh herbs (see photo from my recipe book).

I also do a panzanella salad which I originally found through hello fresh which uses lots of fresh parsley, and most of my pasta dishes use fresh herbs.

I guess I use fresh herbs whenever I make anything if I have them, but I am not great at keeping basil and oregano alive so the ones I have automatically are mint, rosemary, sage and bay with chives if I have remembered to grow them. Basil I buy from the supermarket but oregano I use dried.

I think you can do a really fabulous tomato and vegetable pasta sauce with fresh oregano and fresh basil if you can get it, and this ratatouille recipe uses fresh herbs:

You can stuff a pork loin with almost any combination of fresh herbs and garlic. Mix the chopped herbs and garlic with enough olive oil to make it a thick paste, slit the loin so you can lay it flat then roll it lengthwise round a generous amount of the herb paste. Hold it together with cocktail sticks, wrap in foil and roast for half an hour ish, take the foil off towards the and to brown it a bit.

We use fresh herbs in practically every single meal we make. Coriander in anything Asian/Indian/Mexican, flat leaf parsley in more Mediterranean dishes, oregano and basil in Italian meals, thyme, rosemary and tarragon in stews or things that are left to cook longer. Most fresh herbs you add towards the end, dried are added early on in the cooking. Mint tends to be in things that aren't cooked. Rosemary also goes well with extra virgin olive oil, balsamic vinegar and fresh bread to dip.
We're on holiday at the moment and last night cooked a Greek style potato side dish. Parboiled some potatoes in stock then into a frying pan with lemon juice, turmeric, and garlic, and when they were done we chucked a load of fresh parsley in.

I too would say most recipes use herbs! Agree Ottolenghi uses more than most.
I love tarragon at the moment, especially with cream and chicken (Nigel Slater recipe).

There is a fabulous chicken and tarragon in Delia's summer book.

Otherwise lots of uses in salads, meat dishes, stuffings etc. River Cottage is a good source as is Caldesi books.

Thanks. I also use herbs regularly especially in Asian meals but was wondering if there were any more unusual recipes that used a wide variety of herbs beyond coriander, mint, parsley and dill. Some nice suggestions on this thread already

Salmon fillets are lovely laid on a bed of herbs, seasoned with black pepper and lemon juice, sealed in foil and then baked.

You can chop up all sorts of herbs and mix in with traybakes - chicken portions with peppers, tomatoes, onions and olives springs to mind.

Add to stuffing mixes. Herbs freeze well too.

I usually roast lamb sitting on a branch of rosemary, so you could do that too.

Risotto primavera is a good dish for using herbs but was just looking for an actual recipe and funnily enough they're all really lazy about them! At a minimum I'd use parsley, chives, but also lemon balm and chervil. Both of the latter are really easy to grow in pots as well - chervil from seeds, but be careful and never plant lemon balm in an actual bed, it'll overtake everything just like mint. I also use all of these in salads or omelettes.

these Ottolenghi all the herb dumplings with caramelised onions are wonderful and use a boatload of herbs, 300g between 4 people. In the recon book intro he says the herb varieties are changeable to preference and what you have, and could even be changed to spinach.

this recipe for Georgian chicken stew is wonderful and is also quite herb heavy.

Omelettes and fritata are really boosted with fresh herbs. Any left over herbs I tend to chop into butter and freeze in ice cube trays for supper easy herb butters for meat, fish and veg

Yes- Ottolenghi's cauliflower tabbouleh. It's half herbs and is amazing.
