Gluten Free soy sauce- alternatives.

I will be cooking for someone with celiac soon- I will be making a stir fry, and would usually use dark and light soy sauces.

I have found tamari online which seems to be gluten free- but I am not sure if that is equivalent to light or dark sauce.
Can anyone explain- I am a little confused.

It's fine to just use tamari. I don't think it matters if you don't use light and dark soy sauces TBH.

I use it for chicken fried rice and it works well. I think it's closer to dark soy sauce but I'm not an expert.

Most supermarkets near me stock gf soy sauce in the free from section.

I've always thought the difference between light and dark soy sauce was water, so I use interchangeably especially in a stir fry where the water will evaporate anyway.

The gf soy sauce they stock in that section is tamari.

If you want a dark GF soy sauce then Clearspring do a double strength one which is very nice and definitely has the stronger flavour of dark soy. You can get it from Ocado (and prob other places).

The GF soy (tamari) ones you find in most supermarkets are more akin to a light soy sauce.
