Vegetarian wraps and things on toast etc

Looking for ideas for simple meals when I cba to cook much, especially of the wrap/something on toast sort of meal.

So far I've got -
mushrooms on toast
avocado on toast
chapatti rolled up with onion bhajis, salad and minty yoghurt
pitta with falafel and salad
simple fajitas (tortilla with fried peppers/onions/kidney beans/spices)
naan bread with a really simple mushroom or chickpea curry (ie just fried up with an onions, spices and a bit of yoghurt)

Does anybody do the world's most delicious wrap, which I need to find room for in my life immediately? Is the toast world full of delicious toppings I've not yet contemplated?

Not particularly healthy, but delicious and super quick - a frozen paratha (indian buttery flatbread) in a hot frying pan for a couple of minutes till it puffs up and goes crispy. Top with two fried eggs sprinkled with chilli flakes.

I just put this on another thread: Panzinella. Torn-up slices of cooled toast and chopped mozzarella with a ripe chopped tomato or 2 and all the juice from it scattered over. Drizzle with olive oil and balsamic vinegar, sprinkle on S&P, onion powder and Italian seasoning. Add a hard-boiled egg and / or some tuna to make it more filling. This is my lunch most days in summer - lovely, refreshing and ready in minutes.

Even better if you add lashing of butter to a pan and cook the sandwiches in it. Our go to, morning after a party, breakfast!

We're also a fan of Hash browns, omlette and plastic cheese in a wrap. Basically like McDonald's.

Coronation cauliflower is also a favourite.

I don't think there's any food that isn't improved by being placed between 2 slices of bread, to be honest. Try everything! Report back!

Mix things up a bit, so you fill the pita with curry or your fajita stuffing.

Pita bread cut in hals and buttered' with a 50/50 of hummu and greek yoghurt then fill with your favorite vegis.

Welsh rarebit. Or homemade 'toast toppers', mix up some goats cheese with spring onion top with a bit of cheddar.

Mash up the avocado with veg, tinned is fine, kidney beans, butter beans, sweet corn.

There really is room in the world for a things on toast cookbook. I think Nigel slater had come closest with his fast food book. And one of the contestants on the Jamie Oliver who gets a cookbook thing was doing a stuff with bread offering that obviously should have won

I agree with this! I live on toast based meals and can't imagine how anyone can be do a low carb diet! Nice bread is a basic human pleasure Wink

Scrambled egg, sun dried tomatoes, caramelised onions, avocado, cheese and smoked chilli mayo in a wrap is the food of gods.

I also make a big batch of chickpeas cooked with onions, tinned tomatoes, garlic and smoked garlic harissa. That is divine on toast - especially with a poached egg or feta sprinkled over.

Are we including toasties? Or jaffles as they are called in Australia and I want them to be called here.

Baked beans with cheese. Or actually lots of tinned food make good fillings, tinned spaghetti, chopped tomatoes (can add kidney beans and chilli powder or a stringy cheese). And now I want one and I didn't put sliced bread on the Sainsbury's delivery.

Egg on its own (whole or scrambled) or with spring onion or cheese.

Cream cheese and spinach.

Then sweet variations using apple pie filling or banana, any tinned fruit.

I made marry me beans for dinner last night. There is a small portion left which I believe will be perfect on bread of some sort for lunch - assuming the kids don’t eat it as a snack before I get to it

@RemusLupinsBiggestGroupie maybe making your own baked beans? Use a bean you actually like and experiment with spices.

I don’t like baked beans but I like marry me beans and have had homemade baked beans that I enjoyed.

I do sometimes make my own baked beans but they don’t count as a super-quick tea as I like to bake them for ages.

Cream cheese, kimchi, spring onion and coriander.
Butter beans mashed with lemon and garlic with cucumber, rocket and chilli sauce.
Pan con Tomate
I love leftover roast veg stirred through a packet of rice in a wrap. Even better with guacamole and sour cream. Basically a veggie burrito.
I know you've already said mushrooms but I adore mushroom Alfredo on toast and could eat it daily!
