What to do with sage leaves?

Our sage plant has doubled in size so we need to use some. Any ideas of what we could do with it?

cook them in some butter with black pepper to make a sage sauce for pasta. Serve with Parmesan. Any type of pasta altho I like a cheese and pine nut type of ravioli.

It's very commonly used in the ME for stomach upsets and sore throats, it is boiled or a few leaves put in tea. I cut the extra stuff back, put it on a tray near a window, and it dries out within a week. I then just store it in a bag or airtight container and it lasts for months.

I tear the leaves off the stalks and dry them. I then crumble them and put them into small jars. I do the same with Rosemary, and I also dry Bay leaves and jar them. I then give them as presents to friends who cook.

Yes I was going to say for butternut squash risotto! I fry the sage leaves very briefly in hot olive oil until they're crispy and then sprinkle them on top of the risotto before serving.

But you won't get through a whole bush that way.

Cut branches off, soak them in water for an hour or so. Fire up the BBQ and use them to steam fish. Monk fish with a strip of Parma ham around it is really good.

Chop a few leaves up small and add to scrambled egg.

With butternut squash and cheese in various forms - as above in a risotto, but also in a lasagna.

Add to a sausage casserole.

Sage & onion breadcrumb stuffing with roast chicken or pork.

As you finish coking pork or veal chops or steak, add some sage sprigs to the pan for the last few moments and use them as a garnish.

Add to meatballs or any tomato sauce for pasta.
